Candy's Kusina Home Cook Meal Ideas

It’s been a while... chicken adobo. 🍚🍗

Ingredients:
-2 lbs (900 g) chicken, adoboncut
-½ cup soy sauce
-½ cup white vinegar
-2 cups water
-6 cloves garlic, chopped
-2 bay leaves
-1 medium onion, sliced
-1 thumb ginger, sliced
-1 tsp whole black peppercorns
-1 tbsp oyster sauce
-1 tbsp brown sugar (optional, for a slightly sweeter adobo)
-cooking oil
-boiled eggs (optional)

Instructions:
-Heat oil in a pan. Sauté the garlic, onion and ginger until fragrant.
-Add the chicken pieces and cook until they are lightly browned.
-Add some salt, peppercorns, and bay leaves.
-Pour in the soy sauce, vinegar, water and oyster sauce.
-Cover and simmer for 30–40 minutes, or until the chicken is tender.
-Remove the lid and continue cooking for a few more minutes to reduce the sauce, if desired.
-Serve hot with steamed rice.

Freshly steamed siomai with chili garlic oil🥟

Ingredients:

450g ground pork
1 small carrot, finely chopped
1 small onion, finely chopped
1/2 cup green onions, finely chopped
1 1/2 tbsp oyster sauce
1 tbsp sugar
1 tsp sesame oil (optional)
1 egg
1 tsp salt
Ground black pepper
Siomai wrappers

Instructions

-In a bowl, combine ground pork, carrot, onion, oyster sauce, sesame oil, egg, salt, and pepper.
-Mix well until sticky and fully combined.
-Scoop about 1 tbsp mixture into each siomai wrapper.
-Gather the sides and lightly press to shape.
-Arrange in a steamer with a little space between each piece.
-Steam for 15–20 minutes or until cooked through.
-Mix with soy sauce, calamansi or lemon, and Chili garlic oil

Easy Stir Fry Veggies with Ground Pork

Ingredients:
3 tbsp cooking oil
200g ground pork
3 cloves garlic, minced
1 small onion, chopped
150g carrot, sliced
200g chayote, sliced
200g green beans
Bell pepper, sliced
3 tbsp oyster sauce
1/4 cup water
Salt and pepper to taste

-In a pan, over medium heat, add 3 tbsp of oil. Add the ground pork and cook until no longer pink. Season with salt and pepper.
-Add oyster sauce and water. Bring to a simmer.
-Add carrots and chayote then stir. Cover and cook for 5 minutes.
-Add green beans and bell pepper. Cover and cook for 3 minutes.
-Transfer to a serving plate, serve with rice.

Hearty and Flavorful Chicken Noodle Soup (Chicken Mami)

Ingredients:
350g chicken bones
120g chicken breast
6 cups water
1 medium onion
1 thumb ginger
2 stalks scallions
1 tbsp pepper corn
1 chicken bouillon
1 tbsp fish sauce
1 tsp salt
250g fresh egg noodles

Toppings:
Carrots, julienned
Shredded Cabbagge
Boiled Eggs
Chopped Scallions
Fries Garlic
Chili Garlic Oil (optional)

Directions:
-In a pot, add chicken bones, chicken breast, onion, ginger, pepper corn, and water. Cover and bring it to a boil.
-Add fish sauce, chicken bouillon, and scallions. Cover and continue to cook over medium heat for 10 minutes.
-Remove the chicken from broth. Remove the meat from the bones and shred. Set aside. Separate the broth.
-Heat 4 cups of water in a small pot. Let it boil. Add the egg noodles, cook for 3 minutes. Discard the water, rinse the noodles, drizzle some oil.
-Arrange the noodles, vegetables, boiled eggs, and shredded chicken.
-Pour the hot broth, garnish with fried garlic and chopped scallions.

6 cups shredded young coconut
425g whole corn kernel
340g kaong ( sugar palm fruit)
340g nata de coco
165g eden cheese
2 packs all-purpose cream
380g condensed milk

Refrigerate at least 6 hours

Ingredients:
2 cups sticky rice (malagkit)
2 cups water
Pandan extract

Latik topping
2 cans coconut milk
1 1/4 cup brown sugar

Instructions:
-Cook malagkit with water until done.
-Make topping: cook coconut milk, brown sugar, until thick.
-Transfer sticky rice to a tray, spread evenly.
-Pour topping and bake at 175C for 20–25 mins
-Let it cool before serving.
