(Shanghai) Butter Mochi / (Korean) Butter Tteok | So crispy & chewy

✅RECIPE:
50g (1/4 c) unsalted butter
200ml (3/4 c + 1 tbsp) milk
50g (1/4 c) sugar
1/8 tsp salt
1 large egg
1/2 tsp vanilla extract
170g (1 1/4 c) glutinous rice flour
YIELD: 12 pcs.
BAKING TEMPERATURE & TIME:
175'C (350'F ) for 20 minutes then increase to
190'C (375'F ) for 20 minutes until sides turn deep brown
BAKING PAN USED: Shell shaped muffin pan
OVEN USED: Electric convection oven, top & bottom heat
