Youtube/Instagram/Pinterest I guess being a daughter of a Home Economics teacher has something to do with it. My vivid memories as a child growing up were having to eat the sample cakes my mother always brought home from the test kitchen o

f their school. My sisters and I got to taste different sorts of cakes, tarts, pies and bread. My earliest experience was when i was 13 years old and made my first mango cream pie and profiteroles. Believe it or not, it turned out great! It was always requested on weekends when all family members were at home and these treats were served during tea time. It's only been a year since i discovered my knack for cake decorating when i was inspired by a reality show on TV and then with the help of social media, i found communities that actually inspired me to be creative. I guess being a professional dentist actually helped me to have patience and resourcefulness that is required in this craft. 50g (1/4 c) unsalted butter
200ml (3/4 c + 1 tbsp) milk
50g (1/4 c) sugar
1/8 tsp salt
1 large egg
1/2 tsp vanilla extract
170g (1 1/4 c) glutinous rice flour

YIELD: 12 pcs.
BAKING TEMPERATURE & TIME:
175'C (350'F ) for 20 minutes then increase to
190'C (375'F ) for 20 minutes until sides turn deep brown
BAKING PAN USED: Shell shaped muffin pan
OVEN USED: Electric convection oven, top & bottom heat

50g (1/4 c) unsalted butter
200ml (3/4 c + 1 tbsp) milk
50g (1/4 c) sugar
1/8 tsp salt
1 large egg

170g (1 1/4 c) glutinous rice flour

YIELD: 12 pcs.
BAKING TEMPERATURE & TIME:
175'C (350'F ) for 20 minutes then increase to
190'C (375'F ) for 20 minutes until sides turn deep brown

8 tsps Nutella spread
100g (1/2 c) softened unsalted butter
100g (1/2 c) light brown sugar, loosely packed
50g (1/4 C) white granulated sugar
1/4 tsp salt
1 large egg
1 tsp vanilla extract
185g (1 1/2 c) all purpose flour
1/2 tsp baking soda
100g (1/2 c) semi-sweet chocolate chips, plus extra for topping

BAKING TEMPERATURE: 175'C or 350'F
BAKING TIME: 20 - 22 minutes
BAKING PAN USED: 9 inches pie pan, greased

30g (2 tbsps) melted unsalted butter
100g (2 cups) chopped kataifi
30g (1/4 cup) toasted chopped pistachio nuts
50g (1/4 cup) melted white chocolate
150g (1/2 cup) pistachio cream

(Cover / Shell)
30g (2 tbsps) melted unsalted butter
1 tsp water
150g mini marshmallows
10g (1 tbsp) powdered milk
20g (2tbsps) cocoa powder
Vegetable oil for greasing gloves, surface mat & plastic scraper

YIELD: 6 or 12 pcs as per desired size

MINI ROYAL BIBINGKA
Before the year ends, here's a simple recipe to make for the festive season- they're chewy, creamy & dense very much like mochi with sweet, cheesy toppings- Happy Holidays everyone!🎄

✅RECIPE:
1 large egg
50 g (1/4 cup) granulated sugar
1/4 tsp salt
1/2 tsp vanilla extract
50 g (1/4 cup) unsalted butter, melted
200 ml (1/2 can) condensed milk (397 g)
200 ml (3/4 cup) coconut milk
✅TOPPINGS:
1 eggyolk
Remaining 1/2 can condensed milk
50 g (1/2 cup) shredded cheddar cheese

YIELD: 9 mini bibingka ( 3 oz. size each)
BAKING TIME & TEMPERATURE:
160'C (320'F) for 20 mins. then place the toppings. Broil for another 10 mins until the tops turn golden brown
BAKING PAN USED: Muffin pan, greased with coconut oil
OVEN USED: Electric convection oven, top & bottom heat
