Christmas last year I had a go at making plum puddings for the first time. Suffice to say, they were a big hit and my MIL asked me to make another one once winter set in. This is Mez’s famous Christmas Pudding recipe - it’s free on the Skinnymixers website (see link below). It is simple to make and is hands down way better than any pudding I’ve ever bought. It also went really well with the leftover custard from my banana and custard binge the other night 😉

You may have heard me say that my family don’t like vegetables so when I’m cooking dinner, they’re usually more of an after thought, hidden veg or plain steamed veggies for me. Well last night I got out the Thermomix cutter and made this spectacular dish just for me!! This is the Vegetable Tian from Recipe Tin Eats! Love Nagi and her team’s recipes!! I did add pumpkin to mine because, why not. If you didn’t already know, you can get the cutter for $50 at the moment, just for hosting a demo (no TM purchases required!)

This Skinnymixers Quick Chicken Stroganoff recipe is perfect for those nights that you’re short on time and need something effortless and delicious. You literally throw almost all the ingredients in to cook. Come back in 10mins to add the last couple of ingredients and it’s done! Love it 🥰

Had a craving for a bit of late-night banana and custard… the Thermomix can be dangerous when it only takes 15 minutes to whip up a fresh batch of custard!

Pre-Thermomix days, making spag bol for dinner would be at least an hour and a half ordeal. I’d have to chop or grate all the veggies so tiny and then simmer for ages to help the veggies dissolve and disappear into the sauce otherwise the family would turn their noses up at the chunks. These days, I can whip up a huge batch of this Skinnymixer’s spaghetti bolognaise in 30 minutes in the Thermomix. The recipe doesn’t have carrot, celery, mushrooms etc but I add them in after the garlic and onion step and no one is the wiser! 🙌
