Minestrone is a a staple in our house as it’s hearty, full of veg and easy to make. It’s a great “clean out the fridge” soup. Today’s veg included broccolini for the first time. You can use GF pasta although I didn’t today. And of course, within a couple of minutes I made pizza dough to accompany the soup. Basic passata, cheese and salami topping. They were a satisfyingly perfect match💚 What was your Sunday night dinner?
