Baingan ka Bharta (Mashed Eggplant Curry) Recipe

Ingredients:
• 2 large eggplants (aubergines)
• 2 medium onions (finely chopped)
• 2 medium tomatoes (finely chopped)
• 2 green chilies (chopped)
• 2 tbsp oil (mustard oil or vegetable oil)
• 1 tsp cumin seeds
• 1 tsp ginger-garlic paste
• ½ tsp turmeric powder
• 1 tsp red chili powder (adjust to taste)
• 1 tsp coriander powder
• Salt to taste
• Fresh coriander leaves (chopped, for garnish)

Instructions:
1. Roast the Eggplant:
• Wash and dry the eggplants.
• Roast them directly on a flame or in the oven until the skin is charred and the inside becomes soft.
• Peel off the burnt skin and mash the soft eggplant pulp with a fork.
2. Prepare the Masala:
• Heat oil in a pan.
• Add cumin seeds and let them splutter.
• Add chopped onions and fry until golden brown.
• Add ginger-garlic paste and cook for 1 minute.
• Add chopped tomatoes, turmeric, red chili powder, coriander powder, and salt.
• Cook until the tomatoes are soft and the oil separates from the masala.
3. Add Eggplant:
• Add the mashed eggplant to the pan.
• Mix well and cook on medium flame for 5–7 minutes so that the flavors blend.
4. Finish:
• Add chopped green chilies and coriander leaves.
• Mix well and cook for another 2 minutes.
5. Serve Hot:
• Serve with roti, naan, or steamed rice.
