Eggs Curry (ডিমের ঝোল) 🍳🍛
সহজ, ঝরঝরে আর ভীষণ টেস্টি—ভাত বা রুটির সাথে পারফেক্ট।
উপকরণ
ডিম 4–6টা (সেদ্ধ)
পেঁয়াজ 2টা (পাতলা কাটা)
টমেটো 1টা (বাটা/কুচি)
আদা-রসুন বাটা 1 টেবিল চামচ
কাঁচা মরিচ 2–3টা (চেরা)
হলুদ গুঁড়া ½ চা চামচ
মরিচ গুঁড়া ½–1 চা চামচ (ঝাল অনুযায়ী)
ধনে গুঁড়া 1 চা চামচ
জিরা গুঁড়া ½ চা চামচ
গরম মসলা ½ চা চামচ
তেল 3–4 টেবিল চামচ
লবণ স্বাদমতো
পানি পরিমাণমতো
ধনেপাতা (ঐচ্ছিক)
রান্নার পদ্ধতি
ডিম প্রস্তুত: সেদ্ধ ডিমে হালকা কাটা দিয়ে অল্প তেলে ভেজে নাও (রঙ সুন্দর হবে)।
মসলা কষানো: কড়াইতে তেল গরম করে পেঁয়াজ ভাজো সোনালি হওয়া পর্যন্ত।
আদা-রসুন, কাঁচা মরিচ দিয়ে একটু নেড়ে হলুদ, মরিচ, ধনে, জিরা দাও।
টমেটো দিয়ে ভালো করে কষাও—তেল ছাড়লে বুঝবে।
ডিম যোগ: ভাজা ডিম দিয়ে মসলা মাখাও।
ঝোল: পছন্দমতো পানি দিয়ে ঢেকে 5–7 মিনিট রান্না।
শেষে গরম মসলা ছিটিয়ে ধনেপাতা।

একটু কাজু/পোস্ত বাটা দিলে গ্রেভি আরও ক্রীমি হবে।

All the flavors of the classic American burger — juicy ground beef, sharp cheese, tomato, onion, pickles, ketchup and mustard situated between two sesame seed buns — are found in this comforting bowl of soup.

The foundation is ground beef, just as the patty is central to a burger. Use a 90-percent lean blend, if possible (a higher fat percentage will work, but since the recipe is cooked in one pot, you might need to pour off some of the grease). From there, add beef stock for more flavor, and milk and Cheddar for a creamy richness.

While pickles always belong on a burger, they’re a little more divisive in soup. However, the chopped dill spears add some crunch and a little punch. This recipe also calls for a tablespoon of brine, but feel free to add more at the end. Create a toppings bar for eaters to make the bowl their own: Extra pickles, shredded cheddar, diced tomatoes and onions are a must, but ketchup and mustard are nice to have at the table, too, for an extra boost of flavor. Of course, don’t forget the toasted sesame croutons to bring it all together.

Swap Option: If you don’t want to buy a pack of hamburger buns, or don’t already have a couple on hand, feel free to substitute with 3 to 4 ounces of seeded white bread. In the end, any bread, sliced into similarly-sized cubes, will do.

This no-cook, frozen dessert can be made in advance so you just need to top with the slightly boozy blackberries before serving. We used a bowl but you can use a silicone cake moulid if you’re feeling fancy.

Ingredients:

3 large free range egg whites
125g caster sugar, plus 3 tbsp.
1 unwaxed lemon, zest and juice
300g mascarpone
2 x 150g packs Blackberries
5 tbsp. gin
¼ x 25g pack mint
Method:

Line a freezeproof bowl (around 20cm diameter) or a silicone cake moulid with a double layer of clingfilm, making sure there is some overhang. In a bowl, use an electric hand mixer to whisk the egg whites, the 125g sugar and 2 tsp lemon juice for 2-3 minutes, until it forms stiff peaks. In a separate bowl, mix the mascarpone with the lemon zest. Fold both mixes together and transfer to the lined bowl or moulid. Smooth the top and cover with the overhanging clingfilm. Put in the freezer to set overnight. One hour before serving, in a bowl, stir together the blackberries, remaining 3 tbsp. sugar, the gin, remaining lemon juice and most of the mint leaves. Once you’re ready to serve, remove the moulid from the freezer and carefully flip the spume out onto a plate. Decorate with the remaining mint and serve with the berries on the side. Cook’s tip Leftovers, Egg yolks Put in a bowl and cover closely to stop them drying out. Use to make ice cream, custard or indulgent scrambled eggs.
