Egg Curry Recipe — 6 Eggs
Ingredients:
6 boiled eggs
2 medium onions, finely chopped
2 medium tomatoes, chopped or blended
1 tablespoon ginger-garlic paste
2 green chilies, sliced
3 tablespoons cooking oil
½ teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon coriander powder
½ teaspoon cumin powder
½ teaspoon garam masala
1 teaspoon cumin seeds
1½ cups water
Salt to taste
Fresh coriander leaves for garnish
Cooking Method:
Boil the eggs for about 10–12 minutes. Peel them and make a few small cuts on each egg.
Heat 1 tablespoon oil in a pan and lightly fry the eggs with a little turmeric and salt. Remove and keep aside.
Add the remaining oil to the pan. Add cumin seeds and let them sizzle.
Add the chopped onions and cook until they become golden brown.
Add ginger-garlic paste and green chilies. Cook for 1–2 minutes.
Add the tomatoes, turmeric powder, chili powder, coriander powder, cumin powder, and salt.
Cook the masala for 5–7 minutes, until the tomatoes become soft and the oil starts separating.
Add 1½ cups of water and bring the curry to a boil.
Add the fried eggs and cook on medium heat for 5–7 minutes.
Add garam masala and mix gently.
Garnish with fresh coriander leaves.
