Pav bhaji on my mind❤️.
For the Bhaji:
• 3 tbsp butter (or oil + butter mix)
• 1 tsp cumin seeds
• 2 medium onions, finely chopped
• 2 green chilies, chopped
• 2 tsp ginger-garlic paste
• 3 medium tomatoes, finely chopped
• ½ cup capsicum (bell pepper), finely chopped
• 2 medium potatoes, boiled & mashed
• 1 cup cauliflower, boiled & mashed
• ½ cup green peas, boiled
• 1 tsp turmeric powder
• 2 tsp red chili powder (adjust to taste)
• 2 tsp pav bhaji masala (store-bought or homemade)
• Salt to taste
• ½ lemon
• Fresh coriander leaves, chopped
🍳 Method:
1. Prepare the masala base:
• Heat butter in a large pan. Add cumin seeds, then onions. Sauté till golden.
• Add ginger-garlic paste & green chilies, cook until fragrant.
• Add tomatoes & cook until soft and mushy.
2. Cook the vegetables:
• Add capsicum and cook for 2-3 mins.
• Add turmeric, chili powder, pav bhaji masala, and salt. Mix well.
• Add mashed potatoes, cauliflower, and peas. Mix everything together.
3. Mash & simmer:
• Add 1 cup water (or more for desired consistency).
• Mash continuously with a potato masher while cooking.
• Simmer for 10–12 minutes until thick, buttery, and well blended.
• Finish with lemon juice and chopped coriander.
4. Toast the pav:
• Slice pav buns in half. Heat butter on a tawa (flat pan), sprinkle pav bhaji masala, and toast pav until golden.

5. Serve hot:
• Plate the bhaji topped with butter, onions, lemon wedge & coriander.
• Serve with buttery pav on the side.
