Marinated Mushroom Salad

Ingredients:
• 500 g (1 lb) button mushrooms, cleaned
• 1 small red bell pepper, sliced into strips
• 1 small green bell pepper, sliced into strips
• 1 medium carrot, sliced into sticks
• 1 medium onion, sliced into thin wedges
• 2–3 garlic cloves, sliced
• 2 bay leaves
• 1 tsp whole black peppercorns
• ½ tsp mustard seeds (optional)
• ½ cup white vinegar
• ½ cup water
• 3 tbsp olive oil
• 1 tsp salt
• 1 tsp sugar
• ½ tsp dried oregano or thyme

Instructions:
1. Blanch mushrooms & veggies: In a pot of boiling water, blanch mushrooms, carrots, and peppers for 2–3 minutes. Drain and set aside.

2. Make marinade: In a saucepan, combine vinegar, water, olive oil, garlic, bay leaves, peppercorns, mustard seeds, salt, and sugar. Simmer gently for 2 minutes.

3. Combine: Place mushrooms, carrots, peppers, and onions in a large bowl. Pour the hot marinade over them. Mix well.

4. Marinate: Cool to room temperature, cover, and refrigerate for at least 4 hours (best overnight).

5. Serve: Enjoy chilled as an appetizer, antipasto, or side dish.
