What you need:
pasta, bacon, mushrooms, onion, cream, white w**e,
Parmesan, olive oil — and two pieces of cookware.

The method:
① Boil pasta in a 24cm stockpot (inner markings = no measuring cup)
② Drain the pasta
③ Heat the 28cm deep sauté pan, then add oil and fry the bacon
④ Add mushrooms and onion, cook until soft
⑤ Pour in white w**e and cream, simmer until thick
⑥ Toss in the pasta, top with grated Parmesan

🥩 Season both sides, rest 10 min

What you need:
short ribs, sea salt, black pepper, garlic, rosemary, butter,
and a stainless-steel pan that holds its heat.

The method:
① Season both sides with salt and pepper, rest 10 min
② Heat the empty pan, then add olive oil (hot pan, cold oil)
③ Sear 1.5–2 min per side until a golden crust forms
④ Add garlic and rosemary, butter on the edge
⑤ Baste the steak with the melted butter
⑥ Rest on a board 3 min before slicing

That golden crust is the Maillard reaction —

Flat or arched glass lid? Here's how to choose.

The flat lid: clean look, stacks neatly, saves space.
The trade-off — when you lift it off a steaming pot, water beads in the middle and drips back into your food.

The arched lid: condensation runs along the curve to the edge, not onto the dish.
It won't dilute the flavor, and the raised dome leaves room for a whole chicken.

Neither is better. It depends on what you need.
Want the clean look and easy storage — go flat.

1. Surface — white gloves on, under bright light, looking for scratches and uneven polish.
2. Base — a concave gauge reads the bottom profile. A good base sits slightly concave when cold; heat brings it flat. We check stability, not flatness.
3. Fittings — handle load test and a water check at the rivets.
4. Dimensions — calipers on diameter, depth, and thickness. Bulk must match the approved sample.
5. Reports — salt spray, dry-heat, and reagent tests, backed by third-party reports.

The supervisor runs through the day: what to produce, which standards apply, where to watch closely. Only then does production begin.

Before mass production, there's a first-article inspection. The first piece gets measured with calipers, micrometers, and a scale. Thickness, precision, weight — all recorded, all posted on the workshop board. If it passes, production continues. If not, we stop and fix it.

Cut both pans in half and place them side by side: a 2.0mm 3-ply pan on the left, our bonded pan on the right. The difference is obvious — our pan has a thick aluminum disc fused to the base.

Tested both at 28cm, 2000W induction, 4 minutes. The thin one's bottom shifted 76%. Ours: 24%.

A good pan isn't dead flat — it has a slight concave base when cold, so it flattens just right when heated and holds the oil centered. A thin base over-expands and domes upward, pushing oil to the edges.

For anyone buying cookware: ask for the cross-section. The thickness is where the quality lives.

One bottom warped 76%. The other, 24%.

That's the difference a bottom structure makes. A thin 2.0mm 3-ply base flexes as it heats up. Our bonded bottom has a thick aluminum disc pressed into it — heavier, more stable.

Put a straightedge across the base and you'll see it instantly: one shows a gap in the middle, one sits flush.

For anyone buying cookware for their brand: look past the polished surface. Check the bottom. That's where the quality is decided.
