Orecchiette with braised fennel, chili and cherry tomatoes made with the Fissler Pure Collection®
📋🌱 Ingredients (serves 4)
300 g orecchiette
1 small fennel bulb, diced
2 red onions, diced
2 garlic cloves, thinly sliced
1 red chili pepper, thinly sliced
400 g cherry tomatoes, halved
100 g crème fraîche
50 ml red wine vinegar
1 tsp sugar
salt
pepper
oregano, dried
basil, fresh
olive oil
parmesan, grated
🧑🍳 Instructions
1️⃣ Toast the fennel and onions in the pan without oil.
2️⃣Add the garlic, chili, sugar and olive oil, and let everything caramelize slightly. Then deglaze with red wine vinegar.
3️⃣ Add the halved tomatoes and oregano. Season well, add the lid and let it simmer for 10 minutes.
4️⃣ Cook the pasta until it is almost al dente, drain, and put 1 cup of pasta water aside.
5️⃣ Finish the sauce with crème fraîche, then add the pasta.
6️⃣ Simmer for another 2 minutes, add pasta water, if needed.
7️⃣ Serve with fresh basil and grated Parmesan.
