Käsespätzle for Lunch. 🤤😍
Ingredients:
- 2 cups all-purpose flour
- 4 large eggs
- 1/2 cup water
- 1 teaspoon salt
- 2 tablespoons butter
- 1 large onion, thinly sliced
- 2 cups grated Emmental or Gruyere cheese (or a combination)
- Salt and pepper to taste
- Optional: Chopped fresh chives for garnish
Instructions:
1. In a large mixing bowl, combine the flour, eggs, water, and salt. Stir until the batter is smooth and thick. The consistency should be similar to a pancake batter. Let the batter rest for about 20 minutes.
2. While the batter is resting, bring a large pot of salted water to a boil.
3. In a separate skillet, melt the butter over medium heat. Add the sliced onions and sauté until they are soft and golden brown, about 10-15 minutes. Remove from heat and set aside.
4. Prepare an ice water bath by filling a large bowl with cold water and ice cubes. This will be used to cool the cooked Spätzle.
5. Once the water is boiling, you can start making the Spätzle. There are different methods for forming the Spätzle noodles. One common method is to hold a colander or a Spätzle maker (a special tool with large holes) over the boiling water and press the batter through the holes directly into the water. Another option is to spread the batter on a cutting board and cut small pieces of dough directly into the water using a knife.
6. Cook the Spätzle in the boiling water for about 2-3 minutes or until they float to the surface. Once cooked, use a slotted spoon or a spider strainer to transfer the Spätzle to the ice water bath to stop the cooking process and cool them down. Drain well.
7. Preheat the oven to 350°F (175°C).
8. In a large baking dish, layer half of the cooked Spätzle, followed by half of the sautéed onions and half of the grated cheese. Season with salt and pepper. Repeat the layers with the remaining ingredients.
9. Place the baking dish in the preheated oven and bake for about 20-25 minutes or until the cheese is melted and bubbly.
10. Remove from the oven and garnish with chopped fresh chives, if desired. Serve the Käsespätzle hot as a main course or as a side dish with a green salad.
