PART 2

Gravy
1/2 cup soaked cashews for the paste
4 medium onions- boiled and pureed
2 tomatoes- boiled and pureed
Ginger garlic paste - 1/2tsp
Coriander powder - 3/4tsp
Cumin powder - less than 1/2tsp
Chilli powder- 1/4tsp
Cardamom powder- 1/4tsp
Salt - according to taste
Sugar - 1/2tsp
Garam masala - 1/2tsp

Heat some olive oil or refined oil,
Cook onion puree until it is thick, add ginger and garlic paste and tomato puree
Add spices and let it cook and dry up a little
Add cashew paste, once it is almost done cooking, add water and bring to a boil and add garam masala. Add the kofta and simmer on low heat, let the koftas soak some gravy.

Being Lactose Intolerant and North Indian do not really go together.. I never thought that the richness and creaminess of North Indian food could be dairy-free or that I could ever eat tofu, so I attempted to make this dairy-free Malai Kofta.. and it is everything you want from a malai kofta! Super soft, moist, rich, decadent and flavourful.

PART 1

For the kofta :
2 boiled potatoes
150gm shredded tofu
1tbsp chopped coriander
1tsp ginger powder or grated ginger
1/2-3/4tsp salt
Cornflour

Mix it all together to get a dough like consistency.
Make kofta balls stuffed with cashews or raisins or even chopped green chillies.
Coat with cornflour and fry.
