المطعم اللي بتتأخر خدمته وقت الذروة، مشكلته نادراً ما بتكون في الفريق.
غالباً مصدرها مرحلة التصميم.

قبل ما نفكر في الخامات أو الإضاءة أو شكل المكان، بنبدأ بحاجة أهم:
حركة التشغيل.

فين التخزين؟
فين التحضير؟
فين الغسيل؟
وإزاي الأكل يوصل للخدمة بأقل حركة وأقل وقت؟

لأن كل خطوة زيادة بيمشيها الفريق…
بتتحول مع الوقت إلى دقائق ضايعة، وتأخير في الخدمة، وتكلفة تشغيل أعلى.

وفي نفس المرحلة، بيتحدد كل ما يصعب تغييره بعد الافتتاح:
• التغذية والصرف
• مسارات الشفط وهواء التعويض
• ميول الأرضيات
• المعالجة الصوتية

والخامات والإضاءة والشكل بيتبنوا فوق الأساس ده — مش على حسابه.
