Easy Peasy Chicken Pot Pie

Ingredients:
2 pre-made pie crusts
1 can cream of mushroom soup
1 can cream of chicken soup
Splash of milk
2 cups rotisserie chicken
Half a small bag of frozen mixed veggies
Salt
Pepper
Thyme
Butter spray

Directions:
Mix together cream of mushroom soup, cream of chicken soup, rotisserie chicken, mixed veggies, and seasonings.
Lay one pie crust in a pie pan.
Add the mixture on top of the crust and cover with the second pie crust.
Bake in a preheated 375°F oven for 40 minutes.
Remove pie and spray the top with butter. Broil for 2 minutes until golden brown.

Shrimp, Corn, Potatoes, and Smoked Sausage Foil Pack

Ingredients:

1 lb shrimp (peeled and deveined)

2 ears corn (cut into thirds)

2 medium potatoes (diced)

1 smoked sausage (sliced)

2 tbsp olive oil

1 tsp paprika

1 tsp garlic powder

Salt & pepper to taste

Fresh parsley (optional, for garnish)

Preparation:

Preheat oven to 400°F (200°C) or prepare a grill.

Cut 4 large sheets of foil. Divide potatoes, corn, sausage, and shrimp evenly onto each sheet.

Drizzle with olive oil, sprinkle with paprika, garlic powder, salt, and pepper.

Fold foil into packets and bake or grill for 20–25 minutes until potatoes are tender and shrimp are cooked.

Open the foil packs carefully, garnish with parsley, and serve hot!

Crispy Chicken Batter

Ingredients:
- 1 cup of all-purpose flour
- 1/2 cup of cornstarch (makes it extra crispy!)
- 1 teaspoon of baking powder
- 1 teaspoon of garlic powder
- 1 teaspoon of paprika
- 1/2 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1 cup of cold water or soda water (for lightness)
- Optional: 1 egg (for richer flavor)
-10 pieces of chicken 🍗 drumsticks

Instructions:
1. In a large bowl, whisk together the flour, cornstarch, baking powder, garlic powder, paprika, salt, and pepper.
2. Gradually add the cold water or soda water, mixing until you get a smooth batter. If using, mix in the egg.
3. Dip your chicken pieces into the batter, ensuring they are fully coated.
4. Deep-fry the chicken in hot oil (around 175°C/350°F) until golden brown and crispy.

STUFFED SWEET POTATOES WITH SPINACH, MUSHROOM, FETA, AND ROSEMARY WITH LEMON GARLIC DRESSING 🥔🍄🧀 omg don't lose it

INGREDIENTS:

4 medium sweet potatoes
1 tablespoon olive oil
2 cups fresh spinach
1 cup mushrooms, sliced
½ cup crumbled feta cheese
1 teaspoon fresh rosemary, chopped
Salt and pepper to taste
1 tablespoon lemon juice (for dressing)
1 tablespoon olive oil (for dressing)
1 small garlic clove, finely minced (for dressing)

INSTRUCTIONS:

STEP 1: ROAST THE SWEET POTATOES
Preheat your oven to 400°F (200°C).
Scrub the sweet potatoes clean and pierce them a few times with a fork.
Place them on a baking sheet and roast for about 45-50 minutes, or until tender.

STEP 2: PREPARE THE FILLING
While the sweet potatoes are baking, heat 1 tablespoon of olive oil in a skillet over medium heat.
Add the sliced mushrooms and sauté until golden brown, about 5-7 minutes.
Stir in the spinach and cook for another 2 minutes until wilted.
Season with salt, pepper, and chopped rosemary. Remove from heat.

1 can Rotel tomatoes, undrained

1/2 cup sour cream

1/2 cup milk

1/2 package taco seasoning (or more, to taste)

Instructions:

Preheat your oven to 350°F (175°C). Prepare a 2-quart casserole dish by spraying it with nonstick cooking spray. This helps prevent sticking and ensures easy cleanup.

In a large mixing bowl, combine the shredded chicken or ground beef, shredded cheese, cream of chicken soup, Rotel tomatoes, sour cream, milk, and taco seasoning. Mix well to ensure all ingredients are thoroughly combined. This mixture is the creamy, flavorful base of your casserole.

7. ½ teaspoon dried oregano

9. 1 cup uncooked long-grain white rice (or brown rice, see variations)
10. 2 cups beef broth (or water with beef bouillon)
11. 1 can (10.5 oz) condensed cream of mushroom soup
12. 1 can (10.5 oz) condensed cream of cheddar soup (or substitute with cream of chicken)

Crab Egg Rolls Recipe

Ingredients:

8 egg roll wrappers
8 oz cream cheese, softened
1/2 cup cooked crab meat (or imitation crab), chopped
2 tbsp green onions, chopped
1 tsp garlic powder
1/2 tsp soy sauce
Vegetable oil for frying
Shrimps(skinless) (Optional)
Preparation:

Prepare the filling: Mix cream cheese, crab meat, green onions, garlic powder, and soy sauce in a bowl until smooth.
Assemble the egg rolls: Place a spoonful of filling in the center of each wrapper. Fold the sides, then roll up tightly (add shrimp if wish to add), sealing with a bit of water.
Fry the egg rolls: Heat oil in a pan over medium heat. Fry the egg rolls for 3-4 minutes, turning until golden and crispy.

Here’s this weeks menu. The first picture is what I will eat in one day. The rest of the pics are just what my mass food prep looks like this week. Lol.
A Babybel, 1 hard boiled egg, 6 baby carrots, 3 grape tomatoes and 1 SF Russell Stover candy.
A Greek yogurt.
Fruit & cottage cheese.
3 salads per day which consist of: cabbage slaw with broccoli, grape tomatoes and cucumber in 4oz cups. I’ll top it with the little containers which is 1/4 package Buddig lunch meat, 1/2 hard boiled egg, 1tbs cheese, 1 tbs Greek yogurt dressing each.
Then ingredients for my 2 breakfast tacos. (One in the morning and one at night.)
Not pictured is a protein shake I’ll have with my coffee.

Crock-Pot Cinnamon Roll Casserole
Ultimate Cinnamon Delight in a Slow Cooker
Ingredients:
2 cans of cinnamon rolls (12 oz each)
4 eggs
1/2 cup of milk
3 Tbsp maple syrup
2 tsp vanilla
1 tsp cinnamon
Directions:
Open up the cans of cinnamon rolls and set aside the icing for later use.
Cut each cinnamon roll into quarters using a knife or a pizza cutter.
Spray your crock-pot with non-stick cooking spray, covering both the bottom and sides.
Place one layer of the quartered cinnamon rolls at the bottom of the crock-pot.
In a small bowl, whisk together the eggs, milk, maple syrup, vanilla, and cinnamon until well combined.
Pour this egg mixture evenly over the layer of cinnamon rolls in the crock-pot.
Add the remaining quartered cinnamon rolls on top of the egg mixture.
Drizzle one icing packet over the top layer of cinnamon rolls.
Cover the crock-pot with its lid and cook on low for 2 to 2 ½ hours.
Once cooked, remove the lid and drizzle the last icing packet over the cinnamon rolls.
Serve immediately and enjoy with a glass of milk if desired.

Steps:

Prepare the fish 🐟🔪:

½ cup sour cream
¼ cup heavy cream
2 tbsp all-purpose flour
¼ tsp salt
1 tbsp lemon juice
Peach Topping:

3 cups fresh or canned peaches (sliced)
¼ cup brown sugar
¼ cup granulated sugar
1 tsp vanilla extract
½ tsp ground cinnamon
½ tsp ground nutmeg
1 tbsp cornstarch (optional, for thickening)
2 tbsp butter (cut into small pieces)
Cobbler Topping:

½ cup all-purpose flour
¼ cup granulated sugar
½ tsp baking powder
¼ tsp salt
¼ cup unsalted butter (cold, cut into small cubes)
¼ cup milk
½ tsp vanilla extract

This creamy, dreamy peach ice cream is packed with fresh peach flavor and has the perfect velvety texture. It’s an easy and crowd-pleasing treat, ideal for hot days or special occasions!

Ingredients:
2 lbs fresh peaches, peeled, pitted, and chopped
1 cup white sugar
1 pint half-and-half cream
1 (14 oz) can sweetened condensed milk
1 (12 oz) can evaporated milk
1 tsp vanilla extract
2 cups whole milk (or as needed)
Instructions:
Prep the Peaches: Dice the peaches and mix with sugar in a bowl. Let them sit for 10-15 minutes to release their juices.

Combine Ingredients: In a large bowl, whisk together half-and-half, sweetened condensed milk, evaporated milk, and vanilla extract. Stir in the peach mixture.
