Ingredients:
Crust:
1 ½ cups graham cracker crumbs
¼ cup brown sugar (packed)
½ cup unsalted butter (melted)
Cheesecake Filling:
3 (8 oz) packages cream cheese (softened)
1 cup granulated sugar
1 tsp vanilla extract
3 large eggs
½ cup sour cream
¼ cup heavy cream
2 tbsp all-purpose flour
¼ tsp salt
1 tbsp lemon juice
Peach Topping:
3 cups fresh or canned peaches (sliced)
¼ cup brown sugar
¼ cup granulated sugar
1 tsp vanilla extract
½ tsp ground cinnamon
½ tsp ground nutmeg
1 tbsp cornstarch (optional, for thickening)
2 tbsp butter (cut into small pieces)
Cobbler Topping:
½ cup all-purpose flour
¼ cup granulated sugar
½ tsp baking powder
¼ tsp salt
¼ cup unsalted butter (cold, cut into small cubes)
¼ cup milk
½ tsp vanilla extract
Directions:
Prepare the Crust:
Preheat your oven to 325°F (163°C). In a medium bowl, mix graham cracker crumbs, brown sugar, and melted butter. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 8-10 minutes until golden brown. Let it cool.
Make the Cheesecake Filling:
In a large bowl, beat softened cream cheese until smooth. Add granulated sugar and vanilla extract; mix until combined. Add eggs one at a time, beating on low speed. Scrape the bowl as needed. Stir in sour cream, heavy cream, flour, salt, and lemon juice until smooth.

In a bowl, combine flour, granulated sugar, baking powder, and salt. Add cold butter, cutting it in until the mixture resembles coarse crumbs. Stir in milk and vanilla until a dough forms.
Assemble and Final Bake:
Spread the peach topping evenly over the chilled cheesecake. Dollop cobbler topping over the peaches. Bake at 350°F (175°C) for 20-25 minutes until the cobbler topping is golden brown.
Final Chill and Serve:
