FLY CEMETERY/FRUIT SLICE
300g plain flour(all purpose)
150g cold cubed butter
50g icing sugar (powdered sugar)
1 free range egg
2-3 tbsps cold water
FOR THE FILLING
200g Sultanas or currants
75g caster sugar
50g butter (softened)
1 tsp mixed spice
Zest of 1 whole lemon
Juice of half a lemon
Caster sugar to sprinkle top
Bake for 25-30 mins
160 fan/ 180 non fan/ gas 4

CHICKEN & SPAGHETTI IN A TOMATO/BASIL SAUCE
2 chicken breasts (poached)
400g vine tomatoes
Bulb of garlic
1 banana shallot
Handful of basil
100ml chicken stock
250g spaghetti
Olive oil
Salt and pepper to season
Grated Parmesan to garnish
Pasta water to loosen sauce if needed
Serves 3
500 calories per portion

PAMESAN & CHEDDAR CHEESE BISCUITS
100g cold cubed unsalted butter
100g plain flour
Pinch salt
Pinch cayenne pepper
1 heaped tsp mustard powder
50g mature cheddar (grated)
50g Parmesan (grated)
1 egg beaten
A little extra Parmesan to sprinkle on biscuits
Preheat oven to 180/350f/gas4
Bake for 10 minutes

BAKED TATTIES WITH PRAWNS IN A MARIE ROSE SAUCE
3 large baking potatoes
Olive oil
Salt
500g cold water prawns
300ml light mayo
3 tbsps tomato ketchup
Splash of Worcestershire sauce
Juice of half a lemon
Sprinkle of paprika
Serve with a nice fresh salad of choice.
