Still on my quest to try out crème pat made from all the different fruits, and black cherry will always be up there for me. So a kind of torched Black Forest cream puff… I guess??
Not for the faint of heart, this is an indulgent one. But if you’re heavy on the cocoa and the torching of the meringue, you get a cracking bitter-sweet balance that is almost like a black cherry/s’mores situation (thanks to that craqu’). And you know what, I’m all here for it 🤌

Was worried my baking brain had melted away so have been recipe *tweaking* some of my classics. This basic recipe is delicious as is, but made even better for the halloween season by subbing out the cinnamon butter for a cardamom and pumpkin pie swirls. Beautifully balanced sweetness, and warming spices - the best way to fill your house with the scent of autumn 🍂

These fudgy scandi-spiced double chocolate chip cookies are the first treat in my 2022 Christmas calendar. Heavy on the cinnamon and nutmeg, but with the richness of dark chocolate and cocoa, they’re crispy and chewy without being overly sweet. What a way to start getting into the festive spirit👌💃🏼

A belated 30th Birthday cake for the man who never had enough plants (or so he says…👀). A rogue day off gave me the opportunity to make some succulent cake toppers and make sure my piping skills weren’t getting too rusty. HBD 💛

Chocolate fudge cake, layered with homemade smoked salted caramel buttercream and coated in whipped dark chocolate ganache. Miniature pot plants are made from coloured fondant, buttercream (coloured with natural Pandan and Ube essence to get the right shade of green) and edible candies.

Back at it again with a new variation: caramelised white onion, Grana Padano, honey, and truffle. An unbelievable, moreish, salt and sweet combo, with an incredible texture from the onion too. Best served simply dipped in olive oil and a sprinkle of salt. Simply divine.

Just a little experiment with some Ube essence that I’ve been meaning to try out. A purple swirled Swiss roll filled with that amazing plum and Pimm’s jam, freshly whipped vanilla cream, and topped with some fresh plums. A the chunkiest Swiss roll you’ve ever seen, but still as tasty as ever 👌

It’s been 6 years since I last made soda bread, and even with a failsafe recipe and fair warning not to overwork the dough (thank you 💛), its safe to say I need a wee bit more practice. It’s something that only comes with practice and time, so looks like I’ll be eating soda bread every which way possible for the next few weeks to perfect my technique 👀😅

These Carmelitas are the second trial I’ve done in the space of a week. Knowing what looks and feels right in texture/taste is something you get better at over time, and is all part of the learning curve of baking/cooking. The first batch of these were no where near good enough to even be called carmelitas, but these wee oaty, chocolatey buns here?? They’re more than worthy of the title. Another one to add to the ‘failsafe recipe’ repertoire 👌

S’mores cookies - a failsafe chocolate chip cookie, topped with marshmallows, digestive crumb, and smoked flaky sea salt. Gotta love an oldie but goodie 🙌
