Honey carrots on tahini yoghurt:
3 tablespoons yoghurt
1 tablespoon tahini
1/2 teaspoon dried thyme
1 garlic clove (crushed)
1/2 lemon (juiced)
1/2 teaspoon lemon zest
Pinch of salt
Mix.
Roasted carrots:
A bunch of baby carrots
1 tablespoon honey
1 teaspoon olive oil
Pinch of salt
Coat the carrots in salt and olive oil.
Roast in the oven at 220 degrees for 20 minutes. Add honey and roast for another 10 minutes.
Paprika butter:
Melt 1 tablespoon of butter and 1/2 teaspoon of paprika.
Melt and simmer until frothy (about 5 minutes) on medium heat.
Assembly: top the yoghurt with carrots, paprika butter, feta and thyme.
