🌿 S A M O S A 🌿
Indian cuisine was the very first international cuisine I discovered when I moved abroad 10 years ago - right around the same time I became vegetarian. And let me tell you… it was love at first bite! 😍
Not only is Indian food naturally veggie-friendly (a blessing when eating out), but the abundance of spices, regional variety, and bold flavours completely won me over.
So, when I designed the menu for my Fusion Feast Supper Club, I knew I had to pay tribute to India. 🇮🇳
This is my take on samosas: a layered potato pavé, bound together with a rich cream infused with onion, garlic, ginger, chillies, nigella seeds, and a generous touch of homemade blend.
It’s topped with a tamarind & carrot chutney gel (to recall the sweet dips usually served with samosas) and a delicate, spiced pea cream (a nod to the peas used within the rich potato filling). Finished with pickled shallot and micro coriander for finesse. 👌
This was the very first course of the evening and, judging by the feedback, everyone’s favourite of the entire six-course menu. Honestly, how could I blame my guests? 😋
