Still time to make this now classic Christmas breakfast offering - I’ve made mine ahead to warm though first thing. It could not be easier, sheet of puff pastry, some ready made custard, sprinkle over chocolate chips, more puff pastry on top, a frankly shonky cut out of a tree, slice the sides towards the ‘trunk’ and twist a few times. Then brush with milk before whacking in the oven at 200c for 15mins, check and give it a little longer if eating straight away. I took mine out after 15mins as it will get another oven visit in the morning.
Tomorrow I will dust with a little icing sugar and some edible glitter.

Comfort food doesn’t have to be heavy, this Bean Stew is really easy to make, packed with plant protein and perfect for the freezer. Have it on jacket spuds or toast or as a side to other dishes, I always make double! You can also add some chilli if you like your beans with a kick…

2 large leeks, finely sliced
1 large pepper
2 tins of mixed beans
I tin Chopped tomatoes
4 cloves garlic minced
2 vegetable stock cubes
Black pepper to taste

Cook down the leeks, pepper and garlic until soft, use a low heat and keep the lid on checking it doesn’t brown and stirring frequently.
Add the stock cube and drained tinned beans. Then add the chopped tomatoes and cook together for 15mins before seasoning with salt and pepper.

Saying goodbye to summer with a belated b’day cake for my daughter and her friend who shares her birthday - they also share their special day with Snoopy so he joined them for the party! Double birthday fun also means double the cake flavour inside - vanilla for one and chocolate caramel for the other.

So I’ve had a rearrange in the area next to the hob but I’m not so organised about what we are eating in the week ahead!...

So I’ve had a rearrange in the area next to the hob but I’m not so organised about what we are eating in the week ahead!
I don’t write strict meal plans, mainly because I like to see what’s on offer or discounted at the shops when I’m there and work with that, I find that brings its own inspiration. But I like to have some rough ideas which take in busy work days (this week one dinner will be curry and dal from the freezer) and mean that we don’t double up on meals which are too similar in a day.
Every weekend my call goes out ‘is there anything people want to eat this week?’ And sometimes I might get a couple suggestions, but not always.
So help a girl out - what should I make this week?!?
