Caramel Apple Cheesecake! 🍏🍮

**Ingredients:**
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1 cup sour cream
- 1/2 cup caramel sauce (plus extra for topping)
- 1 cup apple pie filling
- 1 apple, chopped (for garnish)
- Crumbled graham crackers (for garnish)

**Directions:**
1. Preheat your oven to 325°F (160°C).
2. In a mixing bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Mix until well blended. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
3. In a large bowl, beat the softened cream cheese with 1 cup of sugar until creamy and smooth.
4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and sour cream until combined.
5. Pour half of the cream cheese mixture over the prepared crust. Add a layer of apple pie filling on top and drizzle with half of the caramel sauce.
6. Pour the remaining cream cheese mixture over the apple filling.
7. Bake in the preheated oven for 55-60 minutes or until the center is set and the edges are lightly golden.
8. Turn off the oven and leave the cheesecake inside for an additional hour. This helps prevent cracking.
9. Allow the cheesecake to cool at room temperature before refrigerating for at least 4 hours or overnight.
10. Before serving, top with extra caramel sauce, chopped apple, and crumbled graham crackers for garnish.
