Sul Sul fellow Simmers, foodies, friends and family.
today's recipe is Spinach frittata, perfect for breakfast, brunch or lunch πŸ˜‹.
INGREDIENTS
6 eggs
200g mature cheddar
2 handfuls of spinach
A small brown onion, finely chopped
A good splash of milk
salt and pepper to taste.

METHOD

1. warm some oil of your choice over a medium heat, i used olive oil.

2 finely chop your onion

3. saute onion until soft

4. add a couple of handfuls of onion to pan, saute until starting to wilt

5. beat 6 eggs into a little milk, add salt, pepper and 150g of your cheese

6. add egg/cheese mixture to your vegetables.

at this point you can pop it into the over at 180c for 20 minutes, add 50g of cheese over the top, cook for another 5 minutes, then serve.
orrrrrr, do as I did.
7. (optional) keep cooking over a med/low heat for 4 -5 minutes until egg is starting to firm up, a little jiggle is good!
8. remove from heat , top with remaining cheese, pop it under the grill on medium for 5 minutes.

recipe serves 4 - 6 people.

Sul sul simmers and foodies, in Sims 4 City Living, there are 27 unlockable recipes, this, my friends, is one of them πŸ’œ and you don't even have to pop down to San Myshuno and hope the Chinese footstall is there to unlock it, I'm giving it away right here 🀣
Sweet and Sour eggplant McDee style, enjoy!

INGREDIENTS
1 aubergine/eggplant, diced

handful of button mushrooms, sliced

1 medium carrot, ribboned

2 Peppers, sliced

1 red onion, sliced

1 TBSP cornflour (to coat vegetables)

1 can pineapple chunks, juice included

sesame oil, to fry veg

FOR THE SAUCE

125mls rice vinegar

75G brown sugar

45mls ketchup

30mls soy sauce

1 TBSP cornflour

1 tsp ground ginger

1 tsp lazy garlic (or 1 clove, Minced)

METHOD

1. mix your sauce ingredients together, set to one side

2. slice, then coat your veggies in 1 TBSP corn flour

3. heat some sesame oil over a medium heat, add veg, saute until soft but with a slight crunch

4. Add your pineapple (juice too!) And the reserved sauce mixture

5. stir gently for 2 - 3 minutes until sauce has thickened slightly and coats the vegetables

6. serve immediately, we had ours with cauliflower rice, but you can serve with any rice πŸ˜‹

You could absolutely leave out the meat, add an extra cup or two of carrot/cabbage and make these veggie (or vegan if you use rice wraps like I did).

My family LOVED these.

INGREDIENTS

250g pork mince
2 TBSP Minced, dried onion
1tsp garlic puree
1 tsp ginger
2 TBSP hoisin sauce
1 TBSP soy sauce
1 TBSP sesame oil
4 cups finely sliced carrots and cabbage
4 spring onions, finely chopped
12 egg roll wrappers
veg pull to fry (or lightly brush then air fry)

METHOD

Fry off mince

use kitchen roll to mop up excess grease

add sauces and spices, fry 30 seconds until fragrant

add carrot, cabbage, onions, fry until softened

soak rice papers, 1 at a time, fill with 2-3 tbsp filling mixture, fold over ends at top and tail, roll up into sausage shape.

fry in oil for 2-3 minutes per side, or lightly brush with oil and cook in the air fryer at 170c for 12 minutes, or oven at 180c for 15-18 minutes

Busy day in the kitchen.
Blueberry bagels, onion bagels, salt and pepper bread rolls and American bean pie.

No recipe for the brownies because as per challenge they were box brownies (sorry Mumsy, I KNOW, forgive me, I'm your only daughter...)
The marshmallow square recipe came from the Kelloggs website.
I filmed the cookie baking, I just need to type what I was doing on to the video because I'm camera shy πŸ₯Ή

We've made a headstart on level 2 baking recipes today!
Oatmeal cookies.
Without raisins.
Because a certain brother who wanted my garabaldi biscuit told me raisins were dead flies. I didn't believe him until he went on to describe what I was feeling in my mouth as the fly body crunching up.
I haven't eaten a raisin since 🀣
