Recipe for a Pineapple Cake with Cream Topping?
Ingredients
For the Cake:
1 ½ cups all-purpose flour
1 tsp baking powder
½ tsp baking soda
½ cup unsalted butter (room temperature)
¾ cup sugar
2 eggs
½ cup pineapple juice (from canned pineapple)
½ cup crushed pineapple (drained)
1 tsp vanilla extract
For the Cream Frosting:
1 cup heavy whipping cream (chilled)
¼ cup powdered sugar
½ tsp vanilla extract
For Garnishing:
Pineapple slices (for decoration)
Cherries (optional)
Instructions
Step 1: Prepare the Cake Batter
1. Preheat your oven to 175°C (350°F). Grease and line a cake tin.
2. In a bowl, whisk together flour, baking powder, and baking soda. Set aside.
3. In another large bowl, beat butter and sugar until light and fluffy.
4. Add eggs one at a time, beating well after each addition.
5. Mix in vanilla extract and pineapple juice.
6. Gradually add the dry ingredients, mixing until just combined.
7. Fold in the crushed pineapple gently.
Step 2: Bake the Cake
1. Pour the batter into the prepared cake tin.
2. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
3. Let the cake cool completely before frosting.
Step 3: Prepare the Whipped Cream Frosting
1. In a chilled bowl, whip the heavy cream until soft peaks form.
2. Add powdered sugar and vanilla extract, then continue whipping until stiff peaks form.
Step 4: Assemble the Cake
1. Spread a layer of whipped cream over the cooled cake.
2. Decorate with pineapple slices and cherries.
3. Chill for 30 minutes before serving for the best taste.
