These baked Chicken Bites are one of those recipes you end up making on repeat. 🔥🔥
They come out crispy on the outside, juicy on the inside, and the best part? No frying, no mess, just simple ingredients and into the oven they go.
They are perfect for those days when you want something comforting but still easy and a bit lighter. I love making a batch for dinner or even just as a snack to dip into whatever sauce I am craving. Honestly, they disappear fast, so don’t be surprised if you find yourself making them again the next day. 😊☺️
Ingredients:
-300g chicken breast
-1 small potato
-1/2 onion
-1/2 teaspoon salt
-pepper
-1/2 teaspoon garlic powder
-1 carrot, grated
For the breading:
-60-70g panko breadcrumbs
-a pinch of salt
For the sauce:
-1 tablespoons chilli sauce
-2 tablespoons honey
Instructions:
1. Preheat your oven to 220°C/428°F.
2. Place the chicken breast, potato, onion, salt, pepper and garlic powder in a food processor and blend until all is minced. When ready, add the carrot and mix well.
3. Combine the breading mix (I like to toast the breadcrumbs for 4-5 minutes in the oven) to get that golden colour.
4. Shape the chicken mixture in your hand into balls and toss into the breadcrumbs to completely coat.
5. Line a baking tray with parchment paper. Brush generously with olive oil and arrange the balls. You can also spray some oil on top.
6. Bake for 12-15 minutes, turn over, then cook another 7-8 minutes or until cooked through.
7. Serve with honey chilli sauce or their favourite one. Enjoy!
