Yoshikane knives are celebrated for their exceptional blade geometry, featuring slight convex grinds and a superb fit and finish. The 33 layer Sakai Takayuki knives are one of our most popular knives we have and for many years they have been a chef’s favourite. This is due to the outstanding quality of knife and value for money. The handle is made from Mahogany wood in a western style, the blade is stainless steel with a VG10 core and holds a great edge for a very long time. Yakumi pans are small, rectangular stainless steel containers commonly used in Japanese kitchens—both professional and home—for organizing and storing prepared ingredients, especially garnishes and toppings known as yakumi. These pans typically fit into a tray system and come with lids, helping to keep ingredients fresh and easily accessible during service. Ideal for mise en place, yakumi pans are used to hold chopped scallions, grated daikon, minced ginger, sesame seeds, wasabi, and other finely prepared elements that are added just before serving. Their efficient design supports speed, cleanliness, and precision in plating, making them an essential tool in sushi bars, ramen shops, and any kitchen focused on detail-oriented cuisine.

Yakumi pans come in three sizes #00, & #0 the corresponding sizes are # #00 (small) (medium) & #0 (large) you can find the dimensions of the individual pans in the descriptions below in the single pan pages. Only the #0 (large) comes with plastic lids and racks.

The pans do not fit snug into the containers and this is due to you being able to use them hot or cold, the space allows for expansion in the tins so you can leave it above stoves to hold hot garnishes or under hot lamps.
