Low and slow pork belly is all about getting the fundamentals right. 🔥🐖
With a little patience and the right setup, you can create beautifully tender pork with a rich smoky flavour and perfectly rendered fat.
Here are our top tips:
🔥 Charcoal loading: Fill your firebox with quality lump charcoal to ensure a long, consistent burn without needing to top up.
🌬️ Airflow: Make small adjustments to your top and bottom vents. Stable airflow means stable temperatures, which is the key to successful low and slow cooking.
🪵 Wood placement: Nestle one or two chunks of smoking wood amongst the charcoal so they ignite gradually, giving you clean smoke throughout the cook.
🌡️ Probe temperatures: Use a meat probe rather than relying on time. Cook until the pork reaches around 93–96°C and is probe tender.
⏱️ Rest the meat: Once cooked, let the pork rest for at least 30 minutes. This allows the juices to redistribute, giving you more tender, flavourful results.
