Spanish Omelette ☀️
One of the Greatest Food Inventions, on Earth.

For this recipe, Thinly slice the potatoes and onions, then slowly cook them in olive oil until soft
Crisp up the chorizo with grated tomato,
mix together a smoky paprika mayo, and grate plenty of manchego ready for the centre.
Gently cook the eggs with the potato mixture until soft and custardy, layer in the cheese, then shape the omelette in the pan until perfectly round and golden.
Finish with the paprika mayo, spoon over the chorizo topping, and add fresh herbs to serve
