Stuffed baby peppers with pink onion, garlic, chopped walnuts, sage . Drizzle with olive oil and bake in the oven 190C for around 25mins.
Good as a starter with salad or with grains or pasta as a main.

Too early for Brussels? Don’t think so with this autumnal weather.
Brussels and Chinese cabbage with pancetta and chestnuts fried with a glut of apple cider vinegar.
I had this with some buttered sweetcorn and fried leftover lamb shoulder… and the sun came out.

Baked stuffed aubergines, recipe influenced by except this was fully vegetarian.
Super easy. Baked the halved aubergine till soft then scoop out flesh and lightly cook with already salted red onion, garlic and tomatoes. Stuff back into skins and top with ricotta cheese and pop back into oven for about 15mins at 180C.
Serve with salad and vegetables.
