Made this tortellini soup ❤️
For those of you asking for the recipe:
1 or 2 packs of tortellini
1 cup of diced onions
1 shallot
4 cloves of garlic
Italian sausage
Tomato paste
Heavy cream
1 qt Vegetable broth (as well as some water if needed)
Spinach
Fresh Parmesan cheese *optional*
Sauté onions, shallot, and garlic together
Cook Italian sausage in another pan
Once the onion, shallot, and garlic are caramelized, add vegetable broth and the tortellini
Add in Italian sausage once cooked
Add half cup of heavy cream (or to your liking)
Add salt, pepper, and spinach
Add Parmesan
All done! ❤️

This is a family favorite of mine that's kid-friendly and super easy to make! I use a minimum of 3 cans of cream of chicken soup mixed with 2 cups of water and one packet of chicken gravy mix. I pour this mixture over 3-4 uncooked chicken breasts in the crockpot and cook on low for 2 1/2 hours. After cooking, I take the chicken out, dice or shred it, and put it back into the gravy. It's perfect served over rice or egg noodles.

Even with chicken breasts being super expensive in Canada right now, this slow cooker Chicken Pot Pie Gnocchi meal cost less than $20 to make and will make 2 suppers and 2 or 3 lunches. And sooooo good!!
2 chicken breasts
Seasonings of your choice (I used pepper, poultry seasoning, garlic powder, Italian seasoning)
1 bag mixed frozen veggies (it called for frozen soup veggies but I had these ones instead)
Mix:
2 cans cream of chicken soup
3 cans milk.
Pour on top of chicken and veggies.
Cook on low for 6-8h or high for 4-6 hours. Shred chicken and return to slow cooker. Turn to high if it's not already there. Add 1lb gnocchi, cook for another 15-20 minutes.

So I made up my own slow cooker dinner tonight 🙂 I started with a layer of onions on the bottom, then I cut about 10 baby Idaho potatoes in half and placed them on top of the onions. I sprinkled with ranch seasoning, garlic powder, and Italian seasoning. I then layered boneless/skinless chicken thighs on top (I seasoned with the same seasonings as above). I then mixed half a can of low sodium condensed chicken soup with some low sodium chicken stock and water (just enough to loosen it) then I poured that over the chicken. On top I added peeled carrots with some cubes of unsalted butter (about 2 tablespoons) and seasoned with dried rosemary, garlic powder, and Italian seasoning. I cooked on low for 4 hours! Delicious!!! ♥️
My 11 month old son enjoyed it also ☺️

Crock Pot Cube Steak OMG!! THIS IS DELICIOUSS!!
Ingredients:
6 cube steaks
1 medium onion peeled and sliced into rings
1 can cream of chicken soup
1 can cream of celery soup
1 packet Lipton Onion Soup Mix ( you can substitute with low sodium versions of these soups)
1/2 soup can of water

Crockpot Monday calls for some comfort food!
I made this a couple weeks ago and it was amazing!!
Hearty Crockpot Cowboy Soup
Cook Time 2 hours 30 minutes
Total Time 2 hours 45 minutes
Ingredients
2 Lbs Ground beef
4 Yukon Gold Potatoes
2 Cans Mixed vegetables Undrained
1 Can Sweet corn Undrained
1 Can Condensed tomato soup
1 Can diced tomatoes
1 Can Cut green beans Undrained
Pinch Salt
Dash Pepper
Instructions
1. Peel potatoes and cut into small cubes.
2. Brown and drain ground beef
3. Place beef and potatoes in large slow cooker.
4. Add all cans of vegetables, can of tomato soup, and diced tomatoes.
5. Salt and pepper to taste.
Mix together well and cook on low for 2-3 hours in slow cooker.
Recipe Notes
Of course you can substitute fresh or frozen veggies, but would need to add a can or two of beef stock to this. No need to add this if using canned veggies, as you will be adding the cans undrained-which provides both liquid and flavor. Yummy!!

🍲 Cabbage Soup 🍲
Ingredients:

1 large cabbage, chopped
2 small onions, diced
2 cans of stewed tomatoes
1 pouch of Lipton Onion Soup Mix (any flavor)
1 large celery stalk, chopped finely
Ground beef (1-2 pounds)
Instructions:

Fill a large saucepan halfway with water and bring it to a boil.
Add the chopped cabbage, diced onions, and finely chopped celery to the boiling water, then reduce to a simmer.
In a separate pan, cook the ground beef over medium heat until browned. Make sure to drain any excess fat.
Stir in your favorite spices along with the Lipton Onion Soup Mix into the beef.
Add the seasoned beef and stewed tomatoes to the simmering vegetables.
Continue to simmer the mixture for a few more minutes, then taste and adjust seasoning as needed.
Prep Time: 15 mins | Total Time: 45 mins | Servings: 6
