Stuffed Bell Peppers
This reccipe is one of our favourite recipes and is a great way to use your homemade METT if you don’t want to eat it raw. But you can also fill it with some ground beef or something vegetarian like couscous.

Recipe:
- 1 big cup rice
Wash the rice
- 2 big cups water
- Salt
- Chunk of butter
Put the rice and water in a pot and add the salt and butter
Cook that according to the packet instructions
- 4 bell peppers
Cut up the top and remove the seeds
- 400g mett or ground beef (add some salt and pepper if you use ground beef. Mett is usually already seasoned)
Fill the peppers with the meat
- oil
- Water
Heat up some oil in a pot and place the peppers in the pot
Cover the peppers with the top of the peppers and fry them for a while Then fill the pot with some water to reach half of the peppers
Let them simmer for about 20 min until the meat is done and the peppers are soft
- Ca. 100ml cream
- Chunk of butter
- Salt
- Pepper
- Paprika powder
Take the peppers out of the pot and add the cream to the remaining water
Add the butter and season everything with the salt, pepper and paprika powder
- 2 tsp corn starch
- Water
Mix the corn starch with some water
Bring the sauce to a boil and add the mixture to thicken it

I am still so surprised by the result of our own homemade METTWÜRSTCHEN because I would have never thought that this could work so well. And if you have never tried them before you now know how you can make them at home. Just make sure to use really good meat!
And in case you don’t like the Smokey flavour you now also know how to make salami or pepperoni at home

Recipe:

Smoked
To smoke the Mettwürstchen we used some beech wood chips and added a hot coal to keep them smoking
Then we covered that and let that smoke for a few days (2-3 days at good smoke or until it gets drier and harder and has a good smell)
but we regularly added some beech wood chips or changed the coal to make sure that there was always enough smoke
Before eating them clean them with a wet paper towel

Air dried:
This technique will turn out more like a salami or pepperoni one not like a typical Mettwurst but that’s still really good
Hang the sausages in a cool and dark place and let them dry there for 1-2 weeks until they are hard

Easy FLAMMKUCHEN (Sourdough discard)
This is the fastest Flammkuchen you can make and you don’t even have to use your oven
In case you don’t have sourdough discard you can also just mix flour and water

Recipe (1 Flammkuchen):
- 90g sourdough (45g water + 45g flour)
- 1g salt
Mix that and spread it in a hot pan
Turn the dough when the first side is baked
- Cream cheese
- Ham/bacon
- Onions
- Salt
- pepper
Top the dough with some chream cheese, bacon, sliced onions and pepper and salt
Cover it and bake until the dough gets crispy

Chicory
Even if you don’t like chicory you should give this recipe a try because this does not taste as bitter as you would expect. And if you don’t eat meat you can also just add the cheese!

Recipe (4 servings):
Mashed potatoes
- 1kg potatoes
- Water
- Salt
Peal the potatoes and cook them in some salty water for around 20 min or until soft
Remove most of the water and mash the potatoes
- milk
- Nutmeg
- Chunk of butter
- Chunk of cream cheese
Add some milk until you have the consistency you like
Then season it with the nutmeg and add the butter and cream cheese

Chricory
- Chicory
Wash them and cut off the end
- chunk butter
- Water
Melt that in a pot and place the chicory in it
Fry them for a while and then add some water to cover half of the chicory
Let that simmer for about 10min until it is soft
- 4 slices cooked ham
- Cheese
Put the chicory out of the pot and roll it into the ham
Then place it back into the pot and top it with some cheese
Cover the pot and let the cheese melt
- 80ml cream
- Salt
- Pepper
Remove the chicory and add some cream to the remaining water to make a sauce
Them season it with salt and pepper
- 2tsp corn starch
- Water
Mix the corn starch with some water then bring the sauce to a boil and add the corn starch to thicken it

Ep. 17 HÜHNERSUPPE/Chicken broth
This recipe is perfect for this season especially when you have a cold because it’s warm and healthy.

Recipe:
- 1 carrot
- 1 thick slice celery
- 10cm thick leek
Peel the carrot and celery and cut everything into small chunks
- 1/2 chicken (1,2kg)
- Salt
- Water
Wash the chicken and place it in a pot
Add the veggies and some salt
Then cover everything with water
Cover the pot and let that simmer for at least 2-3h
After that time you can remove the chicken
Cut some chicken into small cubes and add to the soup
- soup noodles
Add some soup noodles and wait a few minutes until they are soft
Make a taste test and add some more salt if necessary

Ep. 18 Hühnerfrikassee
A nice and warm Hühnerfrikassee is the best thing to eat when you are feeling sick and a great way to use up your chicken!

Recipe (6 servings):
- 70g butter
Melt the butter in a pot
- 5tbsp flour
Add the flour and mix until combined
- 600ml chicken broth (from my last video)
Slowly mix in the chicken broth to get a thick liquid
- 1 jar asparagus (330g filling weight)
Add the liquid of the asparagus to the sauce and and cut the remaining asparagus in to smaller chunks
- 1/2 chicken (1,2kg) (already cooked in the chicken broth)
Remove the skin and bones and cut the meat into small chunks
- salt
- Pepper
Add the asparagus and chicken to the sauce and season it
- 3 small cups rice
Wash the rice
- 6 small cups water
- Salt
Give the rice, water and salt in a pot and let that cook according to the package instructions
Serve with the Frikassee

Ep. 19 AMERIKANER
Do you celebrate Karneval? Well this is the perfect thing to eat on Karneval and the best thing is you can decorate it just the way you want!

Recipe:
- 125g butter
- 130g sugar
- 1pkg vanilla sugar
- 1tsp vanilla extract
- 3 eggs
- 500g flour
- 11g baking powder
- 250ml milk
- Pinch of salt
Mix everything until smooth
Form them like a cookie on a baking tray
Wet your hands to get an evenly top
Bake at 190°C/370°F convection for 10-12 min
- powder sugar
- Lemon juice
- Water
mix together until you have nice consistency
- Chocolate
- Sprinkles
- Food colouring
Melt the chocolate and decorate the Amerikaner

Ep. 05 Warm POTATO salad 🥔

This is the warm potato my grandma makes but there is also a cold potato salad with eggs and pickles. If you like you can also add some ham to this recipe.
So follow if you also want to see how to the cold potato salad!

Recipe (2 servings):
- Ca. 150 ml veggies stock (cook water with carrots, celery, onions, leek & parsley and season it)
- Ca. 400g potatoes
- Salt
Peel them and cook them for around 20min until they are soft
- 1/2 onion
Cut into slices
Mash down 3 potatoes and add them to a bowl with the veggie stock and the onion
- 3 tbsp oil
- 3 tbsp vinegar
- 1 tsp mustard
- Salt to taste
- Pepper
Add everything to the bowl and mix
Cut the potatoes into slices, add them to the dressing, and everything
Season them again after a while, because the potatoes will absorb the seasoning
Serve it still warm and eat it with a Bockwurst and mustard if you like!

Ep. 06 cold POTATO SALAD 🥔
Which potato salad do you prefer?

This is the typical German cold potato salad which some people eat typically with a Bockwurst on Christmas. If you are also interested in the warm potato salad then see my last post!

Recipe (4-5 servings):
- 1200g potatoes
- salt
Cook the potatoes in the salt for around 20min or until soft
- 3-4 eggs
Cook them until hard
- ca. 10 tbsp mayo
- ca. 10 tbsp pickle water
- 2 1/2 tsp sugar
- Pepper
Give everything to a bowl and mix
- 7-8 pickles
Turn into small chunks and add to the bowl
Peel the potatoes and eggs and cut them into chunks
- salt
Add everything to the sauce and season it salt
Serve it with a Bockwurst and some mustard

Kale Chips
If you usually don’t like kale you should definitely give these a try because they are super crispy and have a completely different taste than the cooked one. And it is super healthy because it has many vitamins and much iron, even more than some meat.
Follow if you also want to see how to make the usual kale!

Recipe:
- Kale
Wash it, remove the stalk and dry the kale
- oil
- salt
- Pepper
- Paprika powder
- Chilli
- Sea salt
Mix everything and fry or bake the kale by 180°C/360° F for round 5 min until crispy
