So I've been making Victoria sponges since I was little.
Most Sundays I'd be in the kitchen making something and this was my favourite.
Remember the little sandwich tins ?
My mum taught me the basic recipe - equal amount of caster sugar, butter and self raising flour and half the amount of eggs. Maybe a little vanilla essence.
That's it !
Now yesterday a neighbour was chatting as her son has to make a sponge in school and she was confused about a bit of the ingredients.
She showed me the recipe.
Omg what a faff!
Firstly it was in cups ( I hate that) ,next they used plain flour with bicarbonate of soda and baking powder, granulated sugar and greek yoghurt were all in the recipe.
Surely for teaching young people simpler is better 🤔.

Now I've never tried that way before ,I've made eggless ,whisked sponges and my way and that's it and I'm sticking to it as I get good feedback .

But I'd love to know how you make yours?
What's your go to ,I know some people weigh the eggs and I've not tried that either .
Let me know.

Or do you just love to eat but 🤣🤣

I didn't know if it was jet lag ? I doubt it from Poland 🤔.
All the awful news constantly surrounding us these days or if it was just coming home ( I do love being home) and resetting again but I just felt do out of sorts for a few days .
I mean I didn't even post on Monday 😉now when I'm quiet then you know something is up .
But what I wanted to say if you feel out of sorts at all just remember this will pass .
Sometimes we just need to go with it .
It's ok to have bad days ❤️

I have taken a little look at next week's orders.
I have someone named Jasmine with a ?? next to the name for next Friday.
I've not put the full name in case her dad's on here sees it but if I put a ? that means she hasn't confirmed or paid etc so I was trying to contact to see if she is still interested.
But I cannot find this person in any invoices or tag them in this post so it's a bit confusing.

If this is you please inbox asap before the space goes .
If I've not heard by tomorrow I will just assume you've changed your mind or left social media 🤔.

Now for the food and drinks part 😍.

Now if you are a foodie,if you love good , homemade tasting food then you need to visit Poland.

Krakow is my favourite place out of Gdansk, sopot, gydina and Krakow. Why? I think there's more choice and they have really lovely street food markets dotted around .
But Gdansk is still amazing!
And if you enjoy fish then head to Sopot.
Right on the coast so lots of selection of fresh fish .

Polish soups are just so full of flavour!
Then there's the cakes !

I never thought I would eat fish soup or wild boar bacon but I did and they were stunning!

Anyway bay to reality. I'm dreading getting on the scales 😕🤣.

We are home 😊.

That's our first full week away in about two years and we loved it!
I don't get excited for things like holidays, Christmas, birthdays etc like most people do , in fact I often feel pressure at those times to mask a lot but when it's me and Andy I know I can just relax.

Poland definitely hit the spot .
We have been to Krakow quite a few times and we absolutely love it but wanted to try somewhere new .

Gdansk is a beautiful place but with Sopot and Gydina a tram or taxi away where you can get to the beach it's a great base .

For me personally Krakow is my favourite for food ( more street food in Krakow ) flavoured vodka ( I hate vodka but love polish flavoured Vodka) architecture ( it wasn't bombed in the war so it's like stepping back in time) , history but Gdansk seems more relaxed and with the beaches close by it's a lovely balance.

Our hotel was fine . Had a pool, sauna .
I think we paid under £500 each for a week away including flights end of may/ June which I think is great!

If you want to eat authentic in Gdansk this is the place!
Now don't expect cwtches,hugs straight away!
This woman is tough but in a respectful way!
Her husband passed ,she's kept it going with her son and grandson and it's amazing!
Firstly the street is full of history! Absolutely fascinating!
Secondly the food is amazing!!
Then the drinks and prices 😍😍.
Thanks Nanna ,you are amazing.So glad to show you appreciation.
