Piña colada glazed pineapple with coconut ice cream. The gaze is simply made by reducing a can of Piña colada (from M&S) by 50%, adding some butter and brown sugar. You then brush the prepared pineapple with the glaze and cook with direct heat and lid down until caramelised. Serve with a drizzle with the glaze and a dollop of coconut ice cream.
