🌿 🍫 Buckwheat Brownies with Walnuts
These gorgeous, gooey brownies are gluten-free and dairy-free, however it doesn’t make them any less delicious. Buckwheat is naturally gluten free and gives a lovely nutty flavour.
1 cup buckwheat flour
3/4 cup, cocoa powder
🤏 pinch of salt
3/4 cup vegetable oil, I used sunflower oil
1 1/2 cup sugar
1tsp vanilla
1 tsp ground cinnamon
3 large eggs
3/4 cup toasted walnut pieces
1. Preheat your oven 180C. Line a 20cmx20cm (8”x8”) pan with baking paper.
2. Sift the flour and cocoa powder, add a pinch of salt and mix well. Set aside.
3. In a separate bowl, mix together oil, sugar, vanilla and cinnamon.
4. Add one egg at a time, mixing well after every addition.
5. Add dry ingredients to the egg mixture, mix until just well combined. No need to over mix.
6. Finally, add the walnut pieces.
7. Pour the mixture into prepared pan and place some walnuts on top.
8. Bake for 15-20 min. I baked mine for 17 min, they came out fudgy and gooey. Bake for longer for more cake like texture.
9. Let them cool down completely before cutting into pieces
What else I like about this recipe is that you can switch buckwheat flour for any other GF flour or normal plain flour, or switching veg oil to melted butter or coconut oil, using the same measurements.
You can also change walnuts to chocolate chips of your choice ♥️
