🌿 🍫 Buckwheat Brownies with Walnuts

These gorgeous, gooey brownies are gluten-free and dairy-free, however it doesn’t make them any less delicious. Buckwheat is naturally gluten free and gives a lovely nutty flavour.

1 cup buckwheat flour
3/4 cup, cocoa powder
🤏 pinch of salt

3/4 cup vegetable oil, I used sunflower oil
1 1/2 cup sugar
1tsp vanilla
1 tsp ground cinnamon
3 large eggs
3/4 cup toasted walnut pieces

1. Preheat your oven 180C. Line a 20cmx20cm (8”x8”) pan with baking paper.
2. Sift the flour and cocoa powder, add a pinch of salt and mix well. Set aside.
3. In a separate bowl, mix together oil, sugar, vanilla and cinnamon.
4. Add one egg at a time, mixing well after every addition.
5. Add dry ingredients to the egg mixture, mix until just well combined. No need to over mix.
6. Finally, add the walnut pieces.
7. Pour the mixture into prepared pan and place some walnuts on top.
8. Bake for 15-20 min. I baked mine for 17 min, they came out fudgy and gooey. Bake for longer for more cake like texture.
9. Let them cool down completely before cutting into pieces

What else I like about this recipe is that you can switch buckwheat flour for any other GF flour or normal plain flour, or switching veg oil to melted butter or coconut oil, using the same measurements.
You can also change walnuts to chocolate chips of your choice ♥️

🍋🧄 Lemon & Garlic Chicken Wings with Feta & Yogurt Dip

Tasty and easy recipe inspired by simple Mediterranean flavours. Chicken wings marinated in plain yogurt, garlic, lemon juice, served with herby feta dip. Fresh herbs really give a taste of spring to this dish 🌿

For the chicken:

1 kg chicken wings
3 tbsp plain or Greek yogurt
juice of 1 lemon
1 big garlic clove, minced
1 tsp onion powder
1 tsp salt
black pepper, to taste

Add a teaspoon of you favourite spices (allspice, lemon & herb, Italian seasoning, etc) ♥️

Mix everything together. Marinate the chicken wings for an hour or overnight. Preheat the oven 200C and bake for 40-50 min or until golden and cooked through,turning them once or twice.

For the dip:

6 tbsp plain or Greek yogurt
75g feta, crumbled
juice of 1/2 lemon
1 garlic clove, minced
small bunch of fresh herbs, I had dill, but use what you like ( parsley, chives, spring onion)
Salt, black pepper to taste

CHEESE 🧀 EGG 🥚 TOMATOES 🍅

Easy and super tasty breakfast idea.
We call them “cheesy pockets” for some reason 🤷🏻‍♀️ and my husband gets excited like a kid when he sees me making them.

All you need is:

•Grated cheese, I had cheddar
•Boiled eggs, chopped
•Tomato, chopped
•Garlic powder
•Salt, black pepper
•Tortillas or flat breads

Mix everything together, wrap in tortilla, toast on dry pan for few minutes on each side.

🥖 No-Knead Bread

It is a first time I am trying no-knead bread. I usually don’t have patients for bread making, but this recipe is practically a miracle.

It is very simple, all you need is 4 ingredients and a Dutch oven ( ovenproof dish with a lid). You will end up with beautiful piece of bread, crusty outside, soft and chewy inside.

465g plain flour
7g ( one sachet) fast action dried yeast
1 1/2 tsp salt
375ml warm water

1. Place all the ingredients in a bowl and mix with a spoon until well combined. Cover with a kitchen towel and leave to prove for minimum 3 hours at room temperature ( I left mine for 4 hours. You can leave yours to prove overnight).
2. Preheat an oven with a Dutch oven inside 230C
3. Gently scrape the dough out onto a floured baking paper.
4. When you Dutch oven is nice and hot, place the dough together with a baking paper inside the oven dish. Cover with a lid and bake for 25 min. After 25 min, remove the lid and bake for further 10-15 min.

That’s all. It is super easy & very tasty. Give it a go.

🤤 Basque Burnt Cheesecake

This cheesecake just stole my heart. No wonder why it has become a worldwide phenomenon.
Baking this cheesecake in very hot oven for short period of time creates this soft and creamy cake from the inside with yammy burnt crust from the outside.
In addition to all the deliciousness, this cheesecake is one of the most easiest recipe I ever made.

430g cream cheese
300ml double cream
20g self raising flour
120g powdered sugar
3 eggs
1tsp vanilla

1. Preheat your oven 220-240C ( I set my oven FAN 220C).

2. Place all the ingredients in a food processor or blender. Blitz together until well combined.

3. Line a springform pan ( I used 8”) with parchment paper.

4. Pour in the cake mix, place in the preheated oven for 35 min, until the top looks burnt, but the cake still has a wobble in the middle.

5. Here comes the most difficult part, waiting. When the cake is done, remove from the oven and cool down completely. Don’t remove it from the tin. When it is room temperature, cover the tin with cling film and place in the fridge for at least 3 hours.

Oh, this cheesecake is worth every minute of waiting.

Caramelised Onion & Mushroom Chicken

Delicious, juicy chicken breast topped with caramelised onion, pan fried mushrooms and cheese, baked in the oven.
Tasty and easy to make, using basically only 4 ingredients.

2 chicken breast, cut in half
300g fresh mushrooms, sliced
2 onion, sliced
100g grated cheese, I used cheddar
Salt, pepper

1. Star by frying the onions until golden. Season with some salt and pepper. Set aside
2. In the same pan, sauté the mushrooms, season them well. I also added some dried thyme. Set aside
3. Place the chicken breasts in an oven proof dish. Season well. Top it with sautéed mushrooms, followed by caramelised onions and cheese.
4. Place in a preheated oven 180C for 25-30 min or until the chicken is cooked through.

🎩 Pilaf Chicken & Rice Pilaf

Pilaf is such a versatile rice dish. Every culture and every family has its own recipe. It is quick and tasty. Conveniently, it is a one pot dish, which makes it perfect for midweek meals.
In my family, we always add a handful of barberries. They taste similar to cranberries, giving a hint of tartness to the dish. Barberries are quite tricky to find where I live. I managed to find some in Waitrose. You can use a handful of dried cranberries instead, or just leave them out completely.

4 chicken thighs, skinless & boneless, cut into big pieces
1 onion, diced
2 medium or 1 big carrot, julienne
1 cup rice, I used parboiled long grain white rice
2 cups water
1 tsp ras el hanout spice mix
1 tsp salt
2-3 cloves of garlic
Handful of barberries (optional)

Heat few tbsp of oil in a heavy based pan that has a lid. Season the chicken thighs and brown them for few minutes on each side.

Add onion, and cook for further few minutes or until onion starting to get some colour.
Add carrots, mix well, fry for 2 more minutes.
Add 1 tsp of ras el hanout mix, barberries and mix well.
Rinse rice very well with water. Add it to the pan. Use the same cup, you used to measure your rice to measure 2 cups of water. Add a tsp of salt. Push in few unpeeled garlic cloves.
Bring to simmer, cover with a lid, bring the heat to low and cook for 25 min or until all water is absorbed and rice is cooked.

🥞 Happy Pancake Day 🥞

Here is my easy recipe of crepes, I’ve been using for awhile now. Never failed me. These pancakes are great for sweet and for savoury toppings.

This recipe will make 10 crepes:

100g plain flour, sifted
300ml milk
2 eggs
Pinch of salt and sugar
1 tbsp vegetable oil

🍚 🍤 Quick & Super Lazy Egg Fried Rice

I don’t think this dish needs any recipe or explanation. I am sure we all make it home very often. And why not... This dish is amazing in so many ways:
•use any vegetables. You have 1/4 of an onion in the fridge or 1/2 a bell pepper,you don’t know what to do with, or 1 mushroom. It all goes in the fried rice. Use fresh garlic and ginger or 🤷🏻‍♀️ use the pastes.
•use leftover rice or precooked one, like I did.
• the sauce. I used soy sauce for seasoning and I had some teriyaki with sesame seeds.
•I had some prawns I needed to use. Usually, I make fried rice just with veggies. However, the possibilities are wide open. Use your leftover chicken, for example😉
