My lovely DofE’ers❤️

I’ve not really been posting much recently, but that doesn’t mean that I don’t value these special teens!

Always engaged, learning new skills and future proofing themselves through cooking!

A lovely thank you from a parent at the end too- I do appreciate everyone’s time in letting me know of their experience with my DofE Cookery Skills course. So grateful for it!

As a career change looms for me, I will continue with the DofE Skills- it is my favourite part!!

The many different faces of Palma.

I had my first girlie trip away from the fam for nearly 10 years last weekend..10 years!!? I met an old friend out in Palma, Mallorca - we stayed very centrally, did a walking tour of this historic, beautiful city, shopped (a lot🤣), did an island tour- train, tram & boat to discover this beautiful island.

Plenty of seafood, interesting buildings and a chilled vibe.

Didn’t really see the beaches which have a bit of a reputation (though overheard all about them on the flight over🤪).

A perfect place for a long weekend!

Super fluffy ricotta, blueberry and lemon pancakes.

Whisking the egg whites separately really helps, as does some baking powder.

Had milk to use up, so made ricotta, though I never know what to do with the whey!! Any ideas??

Community Cooking

Healthier snack and picnic recipes with the Angelic Network ladies.

We made Chilla (savoury chickpea pancakes with veg), Veg Fritters, coriander chutney and rye & almond flour shortbread.

Made in advance and easily transportable with a good balance of protein from chickpea flour, almond flour, eggs and lots of fibre in the veg.

These will sustain them on their walks and are delicious enough to make for all the family too.

Sunday’s Curry..
.(just for us now) on the the bone chicken and chickpea curry with fried aubergine (in the grill, which is so much easier) and my fav, roti!!

Can you tell I’m missing my curry posts😂😂.

A photo dump of what else I’ve been making- including choc babka, freezer stash of 4 choc chip nut cookies, Lebanese 7 spiced lamb mince rolls, leftover rice and veg stir fried rice, using very cute single bulb garlic to make a roasted tomato sauce, which I used with shop bought pumpkin gnocchi, as well as a base for fried eggs with spinach for breakfast.

My mum’s friend made her some Vada (spiced lentil doughnuts). They were Sooo good- light, crispy and super tasty. I’m so grateful she shared🤗.

Can’t believe there is another official adult in the household now, mA!

Celebrations amidst A levels and GCSEs were low key- an evening up in London, cooking our own steaks and a cheeky ice cream for me!

Then a family BBQ of chops, wings, slow roasted lamb and masala fish with salads. Desserts included homemade baklava and a date and walnut cake made by my mum, as well as the birthday boy requested Pavlova made by my sis.

As he doesn’t really like cake, I made a Bienenstich, a creme pat filled brioche which is baked with an almond and honey topping.

Words can never really explain what it’s like to see your kids mature and grow into capable beings (still some way to go for myself!)- though certainly a privilege and an honour for sure.

I am sure further celebrations post A levels with follow!

My DofE’ers💕

They’ve been busy and I haven’t given them enough justice here!

So proud of them! Some are amidst exams, so are having a little break to concentrate on those- best of luck to them!

Others are soldiering on despite ILAs, Personal Statements. end of year revision and Uni open days.

The summer is a great time to embark on my DofE Cookery Skills course, which is always such a positive experience for those taking it (see last slide). Eternally grateful for everyone’s comments and support❤️

Life skills, resilience, perseverance and independence. Real life is not all about academics….

Another superb healthy cooking class given for the ladies of the Angelic Community Network.

This one was all about fish- masala fish fry, spiced roasted salmon, roasted veg bulgar pilaf and sweet potato brownies.

Yum, yum!

Peony Love

Plants do not love me- I basically bring them home to die, so I’ve stopped planting things! It seems a kinder thing to do…

If other people plant, they seem to fare better, but I’m trying not to take offense😂😂.

Flowers are the way to go though and these peonies are beautiful. It’s been warm in my kitchen recently and they have bloomed wonderfully. So blousy, full with such a colourful hue (no filter).

Tones and colours.

Been a long while posting and realised I haven’t been documenting my kitchen life very much either!

Anyway, I observed that my breakfast bowl this morning of ground flax, chia, pumpkin with almond milk, rhubarb compote, blueberries, figs and some granola very much reflected the colours of the flowers in my kitchen😅.

Do you think subconsciously I’m needing whatever qualities reside in pinky/purple food and so, was attracted to buying these stunning Stocks?

I have also been attracted to buying a lot of dark green food lately. Both boys sitting exams, so maybe subliminal messages to try to support them nutritionally through this time!

Spring baking.

Tomato, courgette and feta quiche with homemade shortcrust.

Frangipane Tart, a postponed anniversary treat for hubby.

Almond croissants made with leftover frangipane and shop bought croissants.

Wayyyy too much pastry for me- but once in a while, it’s all good!!

Another cookery session for charity.

Teaching some Angelic Network Community ladies about healthy cooking incl Masala Veg Omlette and Apricot and Pista Ludoos.

A lot of information was shared and some blueprints for healthier recipes were given. I do love teaching!

Some lovely feedback received and looking forward to next time.
