【Our Story Begins with the Taste of the Typhoon Shelter】
There was a time when Causeway Bay’s typhoon shelter was a floating village. Fishing boats packed the water, and on those boats were family kitchens turning out some of the best cooking in Hong Kong. Everything was made over open flame, full of flavour, served without ceremony. Our founder grew up eating that food with his grandparents, passed down from a boat chef’s wok straight to their table on the water. Then the shelter slowly emptied. The boats left, and the flavours started to disappear with them.
So he went looking for the chefs who still remembered his family. One of them had cooked at Hing Kee, a traditional typhoon shelter restaurant. From these chefs, he learned the old recipes, the ones nobody had ever written down. Those recipes are what go into every dumpling we make today. Our Typhoon Shelter Spicy Crab Dumpling is not a reinvention. It is our way of keeping a piece of old Hong Kong on the table.
— Capturing a floating memory that belongs to all Hongkongers.
