涼拌茄子 Eggplant Cold Dish
材料 Ingredients
茄子 2條 / 2 Eggplants
蒜頭 3瓣 / 3 Cloves garlic
辣椒 1條 / 1 Chilli
芫茜 1棵 / 1 stalk Coriander
調味料 Seasoning
生抽 2湯匙 / 2 tablespoons Light soy sauce
糖 2茶匙 / 2 teaspoons Sugar
鎮江醋 2湯匙 / 2 tablespoons Zhenjiang vinegar
麻油 1茶匙 / 1 teaspoon Sesame oil
做法 Method
1. 茄子切約5-6厘米長,再對半剖開。預備一鍋水,加入1茶匙白醋拌匀,再放入茄子,用蒸架壓住,令茄子完全浸在醋水中,不與空氣接觸,避免表面變色。(若切好茄子立刻蒸熟,即可省略此日步驟)
Cut the eggplants into 5-6 cm long pieces and cut them in half lengthwise. Prepare a pot of water, add 1 teaspoon of white vinegar and mix well. Soak the eggplants, put a steaming rack on top, make sure all the pieces are completely soaked in the vinegar water. Do not expose eggplants to air to avoid discolouration. (If you are going to steam the eggplants right away, you can skip soaking them.)
2. 蒜頭切末;辣椒切末;芫茜切碎備用。
Mince the garlic and chilli; finely chop the coriander and set aside.
3. 鍋中加水,開火加熱,將茄子隔水蒸約4分鐘,撈起瀝乾放涼備用。
Prepare a pot of water and heat it. Steam the eggplants over a rack for about 4 minutes, drain and let it cool for later use.
4. 將調味料拌勻,淋上茄子即可。建議將茄子放雪櫃1小時後更入味才享用!
Mix the seasoning and pour over the cooled eggplants. Even better to serve chilled after putting it in the refrigerator for 1 hour!
