雖然好似好豪華🥰🤩,其實都係將屋企嘅「剩餘物資」好好再利用😆
呢個一碟已經滿足晒蛋、肉、菜同澱粉質嘅需要,營養同味道都好有平衡,🔥火候控制好就已經好有餐廳 feel😋


食材 Ingredients:
小薯仔, 英式烘餅, 西班牙黑番茄, 三文魚, 蛋, 煙燻辣椒腸, 沙律菜, 菲達芝士, 鹽, 黑胡椒, 特級初榨橄欖油, 意大利黑醋 Baby Potatoes, Crumpet, Spanish Black Tomatoe. Salmon Steak, Smoked Brats Sausage, Mixed Salad Green, Feta Cheese, Salt, Black Pepper, Extra Virgin Olive Oil, Balsamic Vinegar


做法 Steps:
1. Pan-seared baby potatoes
小薯仔切角,先用滾水煮約 10 分鐘,撈起瀝乾水;之後用中火每邊煎約 30 秒至 1 分鐘至金黃色,外脆內粉。
Cut the baby potatoes into wedges, hard boil for about 10 mins. Drain well, then pan sear each side for about 30 sec to 1 min until golden brown.

2. Pan-seared salmon steak + smoked brats sausage
香腸同三文魚解凍後印乾水,用中火每面煎約 1 分鐘至金黃色,其間可以落少少鹽同黑胡椒碎。
Defrost salmon and sausage, pat dry. Pan sear each side for about 1 min until golden brown, season with salt and black pepper.
*用刀喺腸仔斜斜地輕輕𠝹幾刀,煎完就唔會捲起。
*Slightly score the sausage to avoid curling while heating.

3. Pan-seared Spanish black tomatoes
番茄切約 1cm 厚片,每邊煎約 30 秒至 1 分鐘,有少少焦香就可以。
Slice tomatoes into about 10mm thick, pan sear each side for about 30 sec to 1 min until lightly charred.

4. Scrambled eggs
炒滑蛋可以參考我之前分享嘅貼文;跟住做一定滑溜溜。
You can check my previous post for my scrambled egg tips.

5. Mixed Green Salad
沙律做法都係之前介紹過,其實用咩菜、咩芝士都得,按自己喜好就可以。Any green salad will do, or just mix the salad ingredients listed above.

6. Crumpet
室溫英式烘餅直接放入微波爐叮約 10 秒就啱啱好。
Just microwave the crumpet for about 10 sec at room temperature.
*如果單獨食,可以加少少蜜糖,已經好好味。
*You can also drizzle some honey on top and enjoy it on its own.

如果順住呢個次序煮,就唔洗不停洗鑊。最後用心擺好喺個碟上面,灑少少乾番荽碎,就可以慢慢享用 Bon appétit!

『食得喜』樂齡美食烹飪大賽2025決賽!🎉
早前大廚🧑🏼‍🍳好高興參加咗10月18日喺國際廚藝學院舉辦嘅第七屆『食得喜』(Care Food Cooking Competition 2025)決賽。大賽展示咗7位外籍家庭傭工嘅非凡才華,以『回憶的味道』為主題,將珍貴嘅家庭食譜轉化為安全、美味嘅照護食物。決賽選手製作咗色彩繽紛、營養豐富嘅餐點,符合照護食物標準4至7級,融合創意、情感與精準技巧,幫助吞嚥困難人士重新發現他們以為已失嘅喜悅風味。」​

身為工作坊導師,大廚🧑🏼‍🍳有幸指導參賽者進行實踐課程,將大家嘅個人故事與想法轉化為可執行嘅食譜。各參賽者同埋來自國際廚藝學院(ICI)和中式烹飪學院(CCI)嘅『照護食物見習生』學生廚師合作無間。從酸甜鱈魚到充滿心意的泥狀甜點,各參賽者創新嘅擺盤與細膩嘅調味不僅滿足營養需求,仲能夠喚起溫暖回憶,證明照護食物能同時實用且令人垂涎,適合長者親人及有需要人士。」​

現場氣氛熱烈,得到菲律賓總領事及印尼副領事等尊貴嘉賓嘅支持,突顯社區力量與社會包容在長者照護中嘅重要性。評審選出咗例如『美食獎』同埋『慈愛獎』等獎項,完整頒獎典禮將於2025年11月22日在樂齡科技博覽會暨峰會舉行。​到時歡迎大家到場支持💪🏼

食材 재료 Ingredients:
泡菜 200g, 泡菜汁適量, 豆腐 150g, 豬肉片100g, 青陽辣椒2條, 大蔥半條, 洋蔥半個, 櫛瓜, 蒜蓉 2茶匙, 韓式辣椒醬 2湯匙, 韓式辣椒粉 2茶匙, 高湯或水 , 鹽、糖、醬油、麻油
Kimchi 200g (w/brine), Tofu 150g, Pork Slices 100g, Leek, Onion half, Zuccini (optional), Minced Garlic 2tsp, Gochujang 2sp (hot pepper paste), Korean Chili Powder 2tsp, Broth/Water 500ml, Salt、Sugar、Soy Sauce、Sesame oil

🤗簡易版 - 指用普通食材代替甚至唔用。例如唔用韓式辣椒粉、高湯都可以做出嚟(有八成似), 當然要原汁原味似足喺韓國食就要用晒所有材料。Simplified version - Using ordinary ingredients as substitutes/even omitting them. U can still make it without Korean chili powder or broth (Still 80% alike to the authentic taste). Of course, to make it precise, you’ll need to use all the ingredients.

做法 만드는 법 Steps:
1. 豬肉片切條,洋蔥切絲,櫛瓜和大蔥切片。Slice pork, onion, zuccini and leek.

2. 首先用麻油、鹽、糖、辣椒粉(有就最好)、辣椒醬撈勻醃豬肉片,醃至少15分鐘或放入雪櫃醃過夜。Marinate the pork slices evenly with sesame oil, salt, sugar, chili powder (best to hv), and hot pepper paste 1sp for at least 15 minutes or refrigerate overnight.

3. 鍋中放少許油,爆香蒜蓉、洋蔥、櫛瓜和大蔥片。Heat oil in pot, sauté garlic, onion, zuccini and leek.

4. 加入豬肉片炒2分鐘。Add pork, stirfly 2 mins.

5. 放入泡菜和韓式辣椒醬炒勻。Add kimchi and gochujang, stir well.

6. 倒入高湯,煮滾後轉中小火煮5分鐘。Pour in broth, bring to boil, then simmer 5 minutes.

7. 加入豆腐塊和櫛瓜片,稍煮後加鹽和醬油調味即可。Add tofu, cook a bit more, season with salt and soy sauce.

⚠️注意 Notes:
🔴豬肉可以選擇五花腩切片/豬頸肉切粒一樣可以。
🔴如果買得到青陽辣椒最好, 不過普通長青椒都可以 (因為會更加香, 但係注意都幾辣下🥵)
🔴至於高湯可以買現成嘅豬肉/蔬菜湯都可以味道會濃郁一啲, 最好而又有時間嘅話就做一個韓式嘅*底湯。
*如果有需要大家可以留言大廚會教大家點樣做呢一個底湯

🔴 For pork, u can choose sliced pork belly or diced pork neck—either works just fine.
🔴 If u can get Cheongyang chili peppers, that’s ideal, but ordinary long green peppers will do too (they’ll make it more fragrant, but note that it can be quite spicy🥵).
🔴 As for the broth, u can buy ready-made pork/vegetable stock, the flavor will be a bit richer. Of course, if u hv time, the best option is to make a Korean-style *base soup.

喺上星期三(30/7),大廚👨🏻‍🍳作為照護食種子餐廳計劃星級顧問🌟,聯同社聯照護食工作小組去到參與種子餐廳計劃嘅Happy Kitchen Cafe & Bar舉行照護食教學示範及培訓,主要對象包括 #德國寶 員工同埋來自高科院修讀廚藝及管理榮譽文學士嘅同學👩🏻‍🍳。

培訓由社聯照護食工作小組介紹照護食基本知識概念,以及營養師 李端然女士詳細講解照護食營養重點及烹調技巧 ;再由大廚示範照護食菜式,包括 Lv 6 (軟質及一口量): #柱侯蘿蔔牛肉 、Lv 5 (細碎及濕軟): #豉汁蒸魚柳 以及Lv 4 (糊狀): 普通蔬菜塑形示範 - 西蘭花及甘筍🥦🥕

除此之外,高科院同學亦搶先品嚐到由Happy Kitchen 所研發並即將推出的照護食菜式😋。大廚期待未來有更多跨界合作,喺唔同嘅領域上面都能學以致用,積極回應社會需求!💪💞👐🏻

香港社會服務聯會(社聯)自2024年起推出「照護食種子餐廳計劃」,與餐飲業夥伴攜手,於社區內推動吞嚥友善餐廳,為吞嚥困難人士提供多元化照護食選擇,可以享受與親友同檯食飯嘅美好時光,重拾美食樂趣!😋🍽

大廚作為嘅星級顧問之一喺呢段日子參並與整個團隊向唔同嘅餐廳提供專業培訓及顧問服務、菜式研發,協助參與計劃餐廳夥伴開發符合照護食標準菜式,推廣餐廳照護食餐膳予區內長者、照顧者和公眾人士,鼓勵有需要人士到餐廳選購照護食餐膳。希望各界同大家一齊繼續支持,推動同埋分享咁有意義嘅計劃比身邊嘅朋友。💖

The Hong Kong Council of Social Service is organising the 7th Care Food Cooking Competition. The competition aims to demonstrate the ways to modify the favourite foods into Care Food for individuals with dysphagia (swallowing challenges), enabling them to enjoy their favourite dishes at home🍴.
Tahun ini , Badan pelayanan sosial Hongkong (HKCSS) mengundang para pembantu/tenaga kerja asing untuk berpartisipasi dalam perlombaan dan juga dalam rangka mengajak para majikan untuk memberikan bantuan dgn belajar bersama dengan para pembantu nya .

提起青口,通常都幾極端,一係就好鍾意🥰一係就好怕嗰陣味👃🏻。但係如果用全殼嘅藍青口去煮,味道同口感都會好唔同! 今日大廚👨🏻‍🍳就教大家煮一個簡單嘅 Chili mussles 蕃茄辣椒青口,令大家一試難忘🤩愛上青口。😍

材料 Ingredients:
Whole blue mussels 1kg, tomatoes 2pcs, garlic, parsley, onion ½ /shallots, dry white wine 1 glass, tomato paste 1sp, tomatoe sauce/ketchup, dried chilies 1pc, sugar, salt, olive oil 全殼藍青口 1kg、蕃茄 2個、蒜、蕃茜、洋蔥(半個)/乾葱、乾白葡萄酒(1杯)、蕃茄膏(1湯匙)、茄汁、辣椒乾、糖、鹽、橄欖油

做法 Instructions:
1. 先將青口浸水5 分鐘、去鬚並擦洗全殼。Soak for 5 mins, scrub, de-beard, and rinse the mussels before cooking.

2. 蕃茄切粒,洋蔥切碎粒,蒜、番茜切碎備用。Dice the tomatoes, finely dice the garlic and onion, finely chopped the parsley for later use.

3. 落些少橄欖油開鑊,中火,先爆蒜同埋洋蔥,然後放入青口、白葡萄酒兜勻,冚蓋煮3-4分鐘然或直到青口張開。Oil in the pan, medium heat. Garlic and onion in, stirfly until onions are soften. Adding mussels and a glass of white wine to mix. Cover the pan and cook for 3-4 mins until all mussels opened.

4. 之後加入蕃茄粒,蕃茜碎(1半),辣椒乾,蕃茄膏,適量嘅茄汁、糖、鹽兜勻,轉細火煮2-3分鐘。Adding diced tomatoes, chopped parsley, smashed dried chili, tomato paste and ketchup, sugar and salt to taste. Mix everything up and cook with low heat for 2-3 mins.

5. 用一個大碗裝起所有青口同埋汁醬,最後喺面頭再灑上剩返嗰一半嘅蕃茜碎裝飾同埋增加香味就可以㗎啦。無論你係配法包、多士或者係留返啲汁之後煮個意粉都係非常之好嘅選擇,一滴汁都唔會留低😋😍。*當然如果你用嚟煮意粉嘅話,就小心有啲碎咗嘅殼喺個汁入邊,睇清楚或者食嘅時候小心啲就得㗎啦! 😘Put all the mussels and sauce into a big bowl, adding all the chopped parsley left onto it as garlish plus extra aroma. You may serve with baguette, toast or even using the leftover sauce to mix with spaghetti would be wonderful. *Cook or eat carefully coz it might have some broken pieces of the shell. But don’t waste any drop of that wonderful sauce!

Notes:
乾白葡萄酒:您可以使用任何不甜的白葡萄酒,例如長相思、灰比諾或白比諾。Dry White Wine: You can use any white wine that isn’t sweet such as Sauvignon Blanc, Pinot Grigio, or Pinot Blanc.

如果大家有留意大廚👨🏻‍🍳之前同大家分享點樣整茶葉蛋,但係嗰煲茶香滷水冇理由用一次就嘥咗㗎🤷🏻‍♂️?除咗做茶葉蛋,大家都可以用嚟做另外兩種素食🥬嘅材料都係一種唔錯嘅選擇,就豆腐同埋素雞卷🤩✌🏻。

大家去街市買豆腐嘅時候記住係買炸過嘅豆腐,呢種豆腐個面會硬身一啲,用嚟做滷水就最好不過,如果用其他豆腐好容易就會爛晒。所以記住呢一點啦😉!

材料 Ingredients:
炸豆腐, 素雞卷, 紅茶包2包, 普洱茶3包, 老抽20克, 生抽60克, 冰糖10克, 八角 2粒, 肉桂(桂皮)2條, 花椒 2克, 小茴香 2克, 香葉 4片, 白荳蔻 2克, 鹽 少許, 水 Fried tofu, Vegtarian chicken roll, black tea bag 2, Pu’er Tea bag 3, dark soy 20g, light soy 60g, rock sugar 10g, star anise 2pcs, cassia bark 2pcs, Sichuan pepper 5g, fennel seeds 5g, bay leaf 4pcs, white cardamom 2g, salt(pitch), water

做法 Method:
① 炸豆腐, 素雞卷沖一沖水,然之後滰乾水或者用廚房紙吸一吸水,備用。Put the fried tofu and vegetarian chicken roll under running tap water to clean. Put it aside and let it dry-up or using kitchen paper to absorb excessive water.

② 大家可以睇返之前大廚嘅post有關點樣整個滷水膽。用嘅時候滾返熱,然之後將炸豆腐同埋素雞卷放入去滾5-8分鐘熄火冚蓋,浸泡1-2個鐘,之後取出切片就可以食用。You may check our previous post on making the tea-brine base. Reheat to boil, put the fried tofu and vegetarian chicken roll in and boil for 5-8 mins. Cover it up and let it sit for 1-2 hour. Take them out, slice it up to serve.

素食新「煮」義:吞嚥困難與照護食工作坊

近年,素食成為咗唔少人嘅日常習慣。大家又有冇諗過可以點樣用素食嘅方法嚟製作適合吞嚥困難人士進食嘅照護食呢?

喺啱啱過去嘅星期日照護食星級大使 Chef jLo👨🏽‍🍳聯同社聯照護食工作小組將會喺2月23日(星期日)參與亞洲素食展2025嘅素食廚房環節。除咗仲有照護食工作小組分享有關吞嚥困難同照護食嘅基本知識, 亦示範兩道創新又美味嘅素食照護食菜式。

大家對上一次食 #茶葉蛋 係幾時呢?🤷🏻‍♂️喺印象中茶葉蛋有時太鹹、有時又太淡,最好就喺屋企自己整定,調教啱自己嘅喊道🤩✌🏻今日大廚👨🏻‍🍳就教大家點樣喺屋企好簡單就做到香噴噴嘅茶葉蛋🥚,喺而家咁凍嘅天氣🥶入邊食隻暖笠笠嘅茶葉蛋♨️都係一個唔錯嘅選擇🤤😍

材料 Ingredients:
蛋8-10隻, 紅茶包2包, 普洱茶3包, 老抽20克, 生抽60克, 冰糖10克, 八角 2粒, 肉桂(桂皮)2條, 花椒 2克, 小茴香 2克, 香葉 4片, 白荳蔻 2克, 鹽 少許, 水 Eggs 8-10pcs, black tea bag 2, Pu’er Tea bag 3, dark soy 20g, light soy 60g, rock sugar 10g, star anise 2pcs, cassia bark 2pcs, Sichuan pepper 5g, fennel seeds 5g, bay leaf 4pcs, white cardamom 2g, salt(pitch), water

做法 Method:
①雞蛋洗乾淨,凍水放入煲,水蓋過面,大煮大約6至8分鐘視乎蛋嘅數量同埋大小。 Clean the eggs, put them into a pot with cold water, cover the surface with water, and hard boil for about 6 to 8 minutes depending on the number and size of the eggs.

②將蛋撈起後放入冰水浸泡2-3分鐘降溫。Take out the eggs and soak them in ice water for 2-3 minutes to cool down.

③用金屬匙羹喺蛋嘅殼上面輕輕敲打*均勻,出現裂紋就可以。Use a metal spoon to tap the egg shell gently* evenly until cracks appear.

④唔使落油,炒香香料,直至聞到香味有少少白煙就可以加入水、茶包、老抽、冰糖、已經敲過嘅蛋小火煮大約10至15分鐘。Do not add any oil, stir-fry the spices until you can smell it with little white smoke coming out, then add water, tea bags, dark & light soy, rock sugar, and cracked eggs and simmer for about 10 to 15 minutes.

⑤熄火冚蓋浸泡**至少六個鐘最好一日之後取出就可以食用要吃時再滾味道更佳。Turn off the heat, cover and soak for at least six hours, preferably overnight. And its ready to serve. It will taste better if you reheat them before you eat.

*敲打除咗係因為想有啲靚嘅裂紋,亦都令香味滲入蛋嘅入邊。力不能過輕,裂紋愈多愈深,上色後雞蛋上的網紋才愈靚愈易入味。

*Pounding to create some nice cracks, and also allows the aroma gets into the egg. It can’t be too light nor hard, but the more and deeper the cracks are, the more beautiful the pattern on the eggs, and the easier to absorb the flavor.

大廚👨🏻‍🍳作為照護食星級大使⭐,感謝社聯照護食工作小組嘅邀請去到香港專業教育學院葵涌分校舉辦嘅照護食工作坊,讓新一屆修讀營養學課程嘅學生認識照護食及吞嚥困難。
工作坊順利完成,除咗有社聯照護食工作小組分享照護食相關知識外,大廚👨🏻‍🍳即場示範兩款唔同等級嘅照護食菜式,令同學更深入了解到唔同等級嘅餐膳有咩分別,同時令佢哋明白其實照護食並唔係好似想像中咁難煮。
期望同學可以將照護食嘅概念融合營養學課程所學,將知識融會貫通,為吞嚥困難人士準備既安全、又富營養嘅照護食餐膳😊!
