Come make this delicious Creamy Coconut Stir-Fry with Coconut-Steamed Rice with me!

We couldn’t get enough of this bowl full of colour, flavour and serious comfort!

Tender shredded turkey, mushrooms, sweetcorn, sweet peppers, broccoli and carrots, all brought together in a deliciously creamy coconut milk sauce.

And for my bowl, I added some perfectly air-fried salmon and prawns; because why not? 😋.

Even the rice got the coconut treatment! Steamed with coconut milk for that lovely, subtle coconut flavour that ties everything together beautifully.

One meal, two preferences. My husband enjoyed his without the salmon and prawns, while I loaded mine up with both!

Quick 10-minute Eggs, Mushrooms & Prawns Sauce, 😋.

Some meals don’t need to be complicated to be delicious. Perfect with rice, pasta, yam, plantains, potatoes, bread… honestly, almost anything! I had mine with rice and veggies.

For the tomato paste, it’s a well-seasoned blend of tomatoes, bell peppers, sweet peppers, onions and spring onions. I cook it in olive oil with herbs, spices and seasoning, then let it cool before storing it in the fridge.

Having this base sauce ready means I can whip up a quick sauce or stew anytime. It’s such a time-saver!
