Well deserved as it truly is the best, infact all Indian breads are amazing, North India’s stuffed parathas, missi roti, and makki roti, theplas from the west, luchis (deep fried bread) from the east, Akki Roti (dough made of rice flour) from the south.

The most popular Indian snack is definitely Samosa, with its crispy flaky outer shell and flavourful potato filling.

Our September class was all about the Samosa and an accompanying green & red chutney.

The most complicated part of the samosa is the technique to make and fill the cone to get the triangular shape, to help get that right on a zoom class, a video was shared prior. And we did this together on Zoom. Not perfect results but pretty good and close!

Brynn Hansen got creative and decided to do a samosa roll instead πŸ˜‹

We completed a wonderful set of 3 cook-along classes, as always I have fallen back on posting regularly therefore posting pics from the various classes all together.

The recipes were designed to complete the entire cooking process within 1 hour.

*What did we cook?*

*Kerala Pineapple Curry with curry leaf rice
*Stuffed parathas (using cookie cutter method to get perfect shape) with pickled salad
*Jackfruit Biryani with Boondi Raita

I really look forward to each of these classes, talking about current situation in each country participants live, the way life has changed everywhere post covid, the impact of global warming on climate and ofcourse the most important topic - Food. 🍱

Catching up with overdue posts!

A private cooking class for Jackie and her friends, early February.

Jackie and I met bcoz of Obi, who celebrates his 9th birthday this month. Obi traveled to USA at 4 months, was adopted immediately, but due to a family situation needed to be rehomed. Jackie became his saviour and Obi happily settled into the life he needed.

Obi was very much a part of our cooking class, probably wondering about familiar aroma from Indian recipes.

On the menu was Paneer Butter Masala, Jeera Rice and Cucumber Peanut Salad. Looks wonderful πŸ˜‹

I have fallen behind schedule on posting, we started the year with snack recipes in January 2025, specifically Onion Pakodas and Potato Bonda(mashed n spiced potato balls).
And Masala Chai to sip along β˜•οΈ.

Mastering the art of deep frying is crucial, as a runny batter can result in overly oily pakodas. Utilizing a cook-along format helps minimize such errors.

The outcome was crisp, not oily fritters.
