Gulab Jamun flavored Eggless Cake



Ingredients :
Gulab jamun flour - 1 cup
Baking powder 1 spoon
Baking soda 1/4th spoon
All nuts as per your requirement
Cashews
Almonds
Raisins
Cranberries
Falx seeds- 1 spoon
Cooking Oil of your choice - 1/4th cup

Recipe:

1. Boil water and add flaxseeds to make a slurry semisolid jelly.
2. Filter the flax seeds solution , add Gulab jamun flour, add baking soda and baking powder , oil and mix it properly until it is smooth.
3. Greece the baking pan, add mixed batter and chopped nuts.
4. Preheat oven to 350F and bake the cake for 30 minutes, check the cake with toothpick if it is baked properly.
5. Once the cake cools down, serve it hot!!

Healthy Home made nutrition Bar

Ingredients :
Figs -1 cup
Prune - 1/2 cup
Cashew -3 spoons
Raisins - 2 spoons
Almonds - 3 spoons
Pumpkin Seeds - 2 spoons
Cardamom powder 1/2 spoon
1 spoon clarified butter
1 spoon sesame seeds

Recipe:

1. Grind figs and prunes, add cardamom powder to make a dough.
2. Apply clarified butter on the parchment paper and add the dough and roll it.
3. Add roasted and chopped almonds, cashew, pumpkin seeds, raisin on the rolled sheet, roll it and keep it in fridge to set for 1/2 an hour.
4. Take out the roll and cut it in pieces as per desired shape.

Chilli Lemon Pickle

Ingredients :

Lemons - 5
All types of hot chopped peppers as per your requirement - 1 bowl
Turmeric one spoon
Salt two spoons
Ginger - 1 inch size grated

Recipe:

1. Add lemon juice , turmeric and salt to the bowl of chopped peppers.

2. Mix all ingredients, add grated ginger.

3. Fill the mixture in sterilized bottle.

4. After 2 days, using the pickle.

Story: This year I have harvested lot of raw cherry tomatoes from my plants, before it was frost I had to pick them, so could pick raw ones, just thought of using my Mom’s recipe of pickle. Please do try , hope you all like it.

Raw Green Cherry Tomato Pickle

Ingredients:
Raw cherry tomatoes - 1 cup
Red chilli powder - 5 spoons( super hot)
Salt - 2 spoons
Fenugreek seed powder - 1/2 spoon
Mustard powder - 1/2 spoon
Asafetida- 1/4th spoon
Lemon - 1(juice)
Oil 2 spoons
Cumin seeds 1 spoon

Recipe:

1. Cut the tomatoes in 4 parts or as per your requirement.

2. Add red chilli powder , asafetida, salt, mustard power, fenugreek powder, turmeric, lemon juice to bowl of chopped tomatoes and mix it well.

3. Heat the oil, add little turmeric, asafetida, cumin seeds and add this to the pickle.

4. Fill in the fresh sterilized bottle and keep it for 2 days for fermentation, serve whenever required.

Lentils Soup

Ingredients:
Red lentils(Masoor daal) 1 cup
Yellow lentils(Moong daal) 1 cup
Green chillies 5
Hing(Asafoetida) 1/2 spoon
1/4th spoon Turmeric
Garlic 6 cloves
Jeera(cumin seeds)1 spoon

Serves: 4

Recipe:

Cook both the lentils in cooker.

Take a pan, add ghee, once it is hot , add cumin seeds.

Add Turmeric, Asafetida, grated garlic, chopped chillies, once sautéed, add this to the cooked lentils.

Add salt as per requirement, cook it for few minutes.

Serve it with toppings like Haldiram's snack or specifically with Ratlami sev as it is a good match for someone who is suffering from strep throat.
