Crispy churros with homemade chocolate sauce.

Ingredients
1 cup water
2 tbsp unsalted butter
1 tbsp vanilla bean paste
2 tbsp brown sugar
Pinch of salt
1 cup all purpose flour
2 egg, room temp
For cinnamon sugar coating:
1/2 cup granulated sugar
1 tbsp cinnamon
Chocolate sauce
1/4 cup cocoa powder
1/2 tsp all purpose flour
1/3 cup semi sweet chocolate
1/2 cup granulated sugar
1 tsp vanilla bean paste
Pinch of salt
1 cup milk
Method:
In a pan add water, butter, sugar and salt, bring it to boil. Once the butter is melted and sugar is dissolved. Add all purpose flour. Mix with a spatula until a dough forms on medium low heat. Turn off the heat and let the dough cool for 8-10 minutes.
Add in beaten eggs and vanilla. Mix to combine until a sticky dough forms. This may take about 8-10 min of mixing, but be patient as the dough will eventually come together. Rest the dough for 30 minutes before piping.
Take a piping bag with star shaped nozzle Pipe 8-9 churros on a prepared baking sheet. And freeze for 30-40 min or until the dough is firm.
For the chocolate sauce in a saucepan sift cocoa powder and all purpose flour, add in milk and whisk to combine on medium low heat until smooth. Add granulated sugar and whisk until mixed. Add vanilla and salt. Lastly add chocolate chips. Mix on medium heat for 5-8 min or until the sauce thickens
Pre heat the oil to 325 F. Once the churros are firm enough to hold add them to hot oil . Don’t overcrowd, fry for 3-4 min per side. If the churros are thick it may take longer to fry.
In a dish add granulated sugar and cinnamon. Add warm churros to the sugar mixture to coat evenly . Serve warm with chocolate sauce and enjoy.
