Today was a lazy day for me, that's why today's lunch menu was also very simple but tasty for me. Boiled rice, smashed eggs and potato, boiled moong dal..

Smashed Egg Potato..
Take a tadka pan and put some mustard oil and fry 2 dried red chillies, and keep them aside with oil. On a plate add 2 boiled eggs and 1 boiled potato and smash them together very well until you get a smoothie texture ,take another plate and add salt and those fried red chillies with oil and smash them, then add previously smashed Eggs and potato and mix them properly..

In a Kadai add washed moong dal and water. Add salt and turmeric powder when boiling starts. Cooked until you get your desired consistency. Turn off your flame, add one tablespoon ghee and mix them, it gives you a beautiful aroma in it.

Easy to make Chicken Biryani.

Marination - In a mixing bowl marinate chicken with yogurt, kashmiri red chilli powder, coriander powder, biryani masala,salt, Black pepper powder and refrigerate it for 3hours.

To Make Potato and Egg- In a Kadai add mustard oil, when oil heated add potato pieces and fry them with salt and turmeric powder and keep them aside. In this kadai fry boiled egg with salt and turmeric powder.

To Make Gravy - In a kadai add Ghee, when ghee heated add some whole spices like cardamon,cinamon,cloves, then add chopped onion and fry until it's become nicely golden colour then add ginger garlic paste and fry until it's raw smell goes out. Then add chopped tomato and fry until oil comes out. When oil comes out then add marinated chicken and cook for 45 minutes with lid. Stirr occasionally.

To Make Rice- In a open vessel add water,add bay leaf for good smell, when water starts to boil add soaked basmati rice (rice soaked for 1hours) and cook for sometime. When rice 75% cooked then strain the rice and add some ghee on the rice(it doesn't stick the rice).

To Make Biryani - In a big size casserole add potato pieces in the bottom layer then add rice then add chicken,egg,a little bit gravy on the top of the rice then again add rice, chicken,gravy and continue it. Add ghee, edible rose water,keora water,mitha attar, saffron milk(soaked saffron in the milk for 15 minutes) for it's essence. Then cover it and seal with cling film/kneaded atta. Cook in the Microwave for 10 minutes.

Today's Simple Lunch Menu steamed rice, boiled masoor dal, Fish Curry with curd, sushni leaf/water clover 🍀 fry.

I always preferred to cook rice in a open vessel without a cooker and strained the excess water to get perfect rice.

In a Kadai add washed masoor dal and water. Add salt and turmeric powder when boiling starts. Cooked until you get your desired consistency. Turn off your flame, add raw mustard oil and mix them, it's give you a beautiful aroma in it.

To make Fish Curry with yogurt at first in a kadai add some mustard oil, when oil heated add marinated fishes ( marinated with salt), fry them and keep them aside. For making gravy,in this kadai add some mustard oil, when oil heated add a few mustard seeds and Curry leaves and wait for sputtering,when a beautiful aroma comes out then add onion paste and fry in low medium flame until oil comes out. Then add beaten yogurt and mix them nicely. When oil comes out from the masala then add some water to make gravy, when water starts to boil then add fried fishes, green chilli,salt and a pinch of sugar for taste. When the gravy starts to thicken then turn off the flame and serve it with steamed rice.

Sushni leaf/water clover 🍀 fry. It is very good for our health. To make this recipe at first in a kadai add some mustard oil when oil heated add crushed garlic, small pieces of Red chillies, chopped onion and fry until it's become nicely golden colour and keep them aside. In this kadai add some mustard oil Then add chopped water clover 🍀 leaf,salt and cook it with lid for sometime. stirr occasionly.When it's become soft then remove the lid and fry them without lid untill it's become dry. Add fried onions, garlic and mix them. Now it's ready to serve.

Today's Simple Lunch Menu steamed rice, fish fry, potato snake beans dry curry, masoor dal.

I always preferred to cook rice in a open vessel without a cooker and strained the excess water to get perfect rice.

Fish fry ( marinated with salt and turmeric powder).

To make Potato and snake beans dry curry at first chop the beans into 1 inch pieces.Separately slice the potato into 1 inch sticks.Heat oil and fry them separately with salt and turmeric powder. Next in this kadai add some mustard oil then add paanch phoron(mix of whole spices like mustard seeds, cumin, fennel seeds, kalonji, Fenugreek, ajwain) and whole red chilli. When they splutter,add the masala paste ( made with onion, tomato, turmeric powder,red chilli powder, cumin powder, coriander powder) and fry until oil comes out.Add fried potato and beans and toss them for sometime. Add a little bit of water and cook for a while. Turn off the flame when it becomes semi dry.

For Hot and Spicy Egg Curry with potato at first in a kadai add some mustard oil then add chopped onion and fry them until it's become golden then add ginger garlic paste and fry them, add chopped tomatoes, salt and fry them until oil comes out then add masala paste which made with turmeric powder, Red chilli powder, garam masala powder with water and fry them until oil comes out. Add some water, when water starts to boil then add fried egg and potato pieces (Fry the boiled egg and potato pieces separately with salt and turmeric powder which gives you a nice golden colour). When you get your desired consistency of gravy then turn off the flame.

Today's Veg Menu steamed rice, Water Spinach fry, Ridge Gourd Curry with Potatoes, boiled masoor dal.

I always preferred to cook rice in a open vessel without a cooker and strained the excess water to get perfect rice.

Water Spinach fry. It is very good for our health. To make this recipe at first in a kadai add some mustard oil when oil heated add crushed garlic, small pieces of Red chillies, chopped onion and fry until it's become nicely golden colour and keep them aside. In this kadai add some mustard oil Then add chopped Water Spinach leaf,salt and cook it without lid untill it's become dry. Add fried onions, garlic and mix them. Now it's ready to serve.

Ridge Gourd Curry with Potatoes.
At first in a kadai add some mustard oil then fry the potato wedges with salt and turmeric powder and keep them aside. Then in same kadai add some mustard oil, when oil heated add some chopped onion and fry until it's become nice golden colour, then add chopped tomatoes and fry them. When oil comes out add masala paste made with cumin powder, coriander powder, dry ginger powder, red chilli powder, turmeric powder and fry until oil comes out. Next add ridge Gourd wedges, salt and cook for sometime,next add fried potato pieces,mix them properly, add water, salt for gravy. When water starts to boil add a pinch of vaja masala( made with whole cumin seeds, whole coriander seeds,dry chilli, panchforon,a small amount of cardamon,all are roasted in a empty kadai and grounded)if you want.

Dhokar Dalna is basically a chana dal cake cooked in a simple slurry of spices with potato. This classic Bengali dish is often enjoyed with steamed rice.

To make Dhoka at first wash and soaked chana dal overnight or for 7-8 hours. Next, in the morning make a smooth paste with 2 green chilies and ginger,a pinch of coriander powder,a pinch of cumin powder,a pinch of turmeric powder and salt. Next, take a kadai and add some oil, when oil heated add whole cumin, a pinch of hing and allow it to splutter,then pour in the chana dal paste and cook this over low flame(keep it in a medium consistency not too much dry).Cook it well and turn off the flame.
Meanwhile, take a plate and grease it with oil, pour this over the plate and using a spatula flatten it nicely. Once done, place it in a refrigerator for 15-20 minutes.Meanwhile take them out and cut into desired shape. Then take a frying pan and pour some oil, when oil heated then add those pieces(make a slurry of cornflour and water and dip all the pieces before frying) and fry them nicely.

Next, take a pan add some oil, when oil heated add onion paste, when oil comes out then add tomato puree, cumin powder, coriander powder, red chilli powder, turmeric powder,garam masala powder one by one and cook the masala nicely. Once the oil starts separating from the masala, add some water for gravy, when water starts to boil add the dhoka cubes and fried potatoes ( fry the potato cubes with salt and turmeric powder). Cook for 5 minutes.Turn off the flame and enjoy the dish with rice.
