Paired with my **instant Amchoor Chutney** (no tamarind needed!) and crispy fried green chillies, this is the ultimate comfort snack. 🌶️🥔
📝 **Recipe**
🥔 **For the Potato Filling**
• Boil **1 kg potatoes**, peel them and let them cool completely.
• Mash the potatoes and add:
* Crushed green chillies
* Finely chopped coriander leaves
* Prepared Batata Vada Masala
* Salt (adjust to taste)
Mix everything well and make small or medium-sized balls.
🌶️ **Instant Amchoor Chutney (No Tamarind Needed)**
Mix together:
• ¼ cup amchoor powder
• ¼ cup jaggery
• Salt to taste
• Red chilli powder
• Coriander powder
• Water as required to make a smooth pouring consistency.
🌿 **Batata Vada Special Masala**
Dry roast until lightly golden:
• Coriander seeds
• Cumin seeds
• Fennel seeds
• White sesame seeds
• Cinnamon
• Cloves
Let the spices cool completely. Transfer to a mixer jar, add:
• Salt
• Amchoor powder
Grind into a fine aromatic masala.

Whisk together:
• 2 cups fine besan
• ¼ cup rice flour (helps make the vadas crisp and absorb less oil)
• Salt to taste
• Water (add gradually)
Whisk until smooth and lump-free. The batter should be medium consistency—thick enough to coat the potato balls evenly without being too heavy.

Heat oil on medium flame. Dip each potato ball into the batter, coat well, and fry until beautifully golden and crispy.
