Creamy Chickpea Avocado Feta Salad 🥑🧀
Creamy avocado, salty feta, and a lemony zip in every bite.

You’ll Need (serves 4):
• 2 cans (15 oz each) chickpeas, drained and rinsed
• 2 medium avocados, cut in big chunks
• 1/2 cup thin sliced red onion
• 3/4 cup crumbled feta cheese
• 1/3 cup chopped parsley (or cilantro)
• 1/4 cup olive oil
• 3 tbsp lemon juice (fresh is best)
• 1 tsp dried oregano
• 1/2 tsp black pepper (the photo has a good peppery look)
• 1/2 tsp salt (or to taste)

Optional:
• Extra cracked black pepper on top
• Add 1 tbsp red wine vinegar for a brighter tang
• Serve with warm pita or crackers

How to Make it:
1. Rinse the chickpeas and let them drain well.
2. Add chickpeas, red onion, parsley, and feta to a big bowl.
3. In a small cup, whisk olive oil, lemon juice, oregano, pepper, and salt.
4. Pour dressing over the bowl and stir gently.
5. Add avocado chunks last and fold carefully (don’t mash).
6. Taste and add a pinch more salt or lemon if you want.

Ingredients
Grilled chicken breast 🍗
Cooked white rice 🍚
Avocado slices 🥑
Lettuce leaves 🥬
Cherry tomatoes 🍅
Olive oil 🫒
Salt & black pepper 🧂
Method
Season chicken with salt, pepper, and olive oil, then grill until golden and fully cooked. Slice.
Cook rice until fluffy and set aside.
Wash lettuce and slice tomatoes and avocado.
Arrange rice, chicken, salad, tomatoes, and avocado on a plate.
Drizzle lightly with olive oil and serve fresh.
