Protein Power Bean & Egg Hash [Recipe Below..]

Tried this my own recipe for Tevi on last two mornings, and he loved it so much he didn’t leave a single bean behind! Empty bowl = best compliment! Try it out and lemme know…

Ingredients:
1/2 cup cowpeas,
1/2 cup chickpeas,
1 egg,
1 medium onion, sliced,
2 cloves garlic, finely chopped,
1 green chili, finely chopped,
Cooking oil,
Salt, to taste.

Instructions:
First, soak the cowpeas and chickpeas in water overnight so they are fully rehydrated.
The next morning, rinse the soaked beans and place them in a pot with fresh water and salt.
Bring them to a boil and cook for 15 to 20 minutes until the beans are tender.
Once they are cooked, drain the water completely and set the beans aside.
Next, heat a little cooking oil in a separate saucepan over medium heat.
Add the sliced onion, chopped garlic, and green chili, sautéing until they become fragrant and lightly browned.
Crack the egg into the pan and immediately scramble it, breaking it apart into small pieces as it cooks.
Finally, add the boiled cowpeas and chickpeas into the pan with the scrambled egg mixture.
Stir everything well and let it heat together for a few minutes so the flavors blend beautifully.
