Not every ingredient is meant to be added “by eye.” 👨🏾‍🍳

One of the reasons a recipe may not come out the way you expect is not because the ingredient is wrong—it may simply be because the proportion is wrong.

Take sesame oil, for example. It is a beautiful ingredient, but using too much can completely overpower a dish, while using too little may not give you the flavour and aroma you're looking for.

This is why understanding ingredient proportions, balance and recipe development is so important, especially for chefs, caterers and food business owners who want consistency in every dish they serve.

There are many recipes online, but when you're cooking for clients, running a food business or trying to develop your professional skills, you need more than random measurements—you need recipes you can understand, trust and reproduce consistently.

That is one of the reasons I create content like this. 🔥

👇🏾 Want to know the right proportions for using ingredients like sesame oil in your cooking? Comment “PROPORTION” below or send me a DM, and let's help you get your recipes right.

And chefs, caterers and food business owners—what ingredient did you struggle to get the right proportion for when you first started cooking? Share it in the comments. Someone else might learn from your experience. 👇🏾

Caterers, getting a client is one thing… but keeping that client is where the real business is. 👨🏾‍🍳📈

Many caterers focus all their energy on finding new customers, but sometimes the biggest opportunity is in the clients you have already served.

From your communication and professionalism to food quality, timing, problem-solving and how you handle clients after the event—every experience can determine whether that client calls you again or recommends you to someone else.

In this video, I shared some important ways caterers can build stronger client relationships and turn one-time customers into returning clients.

But I don't want this conversation to end with my opinion. 👇🏾

🎙️ Experienced caterers, what is ONE thing you do that has helped you retain clients?

And if you're a younger or upcoming caterer, read through the comments, ask questions and learn from someone else's experience.

Let's build a community where caterers don't just watch content—we share experiences, learn from one another and grow together. 🔥

👇🏾 Drop your own client-retention secret in the comments and respond to another caterer's comment too!

Great recipes are not found by chance. They are developed with intention. 👨🏾‍🍳

Behind every recipe I share is a process of research, testing, refining, understanding ingredients, balancing flavours and perfecting measurements. What you see as a finished dish may have taken several trials before it became a recipe worth teaching or serving to a client.

As chefs, caterers and food business owners, we shouldn't just be looking for any recipe — we should be looking for recipes that actually work for our business, our clients and our kitchen operations.

Do you have a particular dish or recipe you want to develop?

Whether it's Nigerian, continental, Asian, pastry, grills, seafood or a signature menu item, Chef Ozars Hospitality Consulting can help you research and develop a detailed, workable recipe tailored to your needs.

The secret most caterers don’t know 👀🔥

Getting a client is one thing. Keeping that client and turning them into a repeat customer is where the real money is.

That kiddies party you’re seeing in this video wasn’t just another event—it’s a reminder that your clients are not only paying for food. They’re paying for experience, reliability, professionalism, attention to detail, and the confidence that you’ll deliver every single time.

Chefs and caterers, if you want to make a sustainable living from this business, stop focusing only on getting new clients.

Learn how to keep the ones you already have.
Because one satisfied client can bring you 3, 5, even 10 more opportunities. 💯

The goal isn’t just to cater an event.
The goal is to become the caterer they refuse to replace. 👨🏾‍🍳🔥

You’re Busy. But Your Growth Can’t Wait. 👨🏽‍🍳🔥

One of the biggest challenges many chefs face today is finding the time to keep learning.

Between catering jobs, kitchen operations, menu development, client demands and the daily pressure of running a food business, learning can easily be pushed aside.

But here’s the truth: your busy schedule should not stop you from becoming a better chef.

That’s exactly why I created the Chef Ozars Asian Cuisine Mastery Book 📖🥢

It gives you a practical way to learn and improve your Asian cuisine skills at your own pace—without needing to wait for the perfect time to attend a physical class.

Whether you’re a chef, caterer, food vendor, restaurant owner or culinary entrepreneur, this book can help you bridge that learning gap and add more Asian-inspired dishes to your culinary repertoire.

💰 Price: ₦20,000

Your catering business may not be failing because you lack customers… you may simply be unable to meet the demands of the customers you already have. 👨🏽‍🍳🔥

Today’s clients want more than the usual menu. They want variety. They want international flavours. They want Chinese and Asian-inspired dishes that can make their events stand out.

And when a client asks, “Chef, can you make Chinese food?” — you need to be ready. 🎯

That’s one of the reasons I created The Asian Cuisine Pastry — to help caterers and food entrepreneurs expand their culinary skills, satisfy the growing demand for Asian cuisine and position themselves as the chef clients can confidently recommend.

Don’t just compete for catering jobs. Become the caterer with something different to offer.

📖 The Asian Cuisine Pastry is more than a cookbook. It is a tool to help you expand your menu, increase your value and create new opportunities in your catering business.

If you’re serious about taking your catering business to the next level, this is for you.
