Skogen Balls - A piece of the forest on your plate 🌲

When it's cold outside, nothing compares to a warm meal that hugs your senses. 🍂

Skogen Balls dreaming of nature's quiet and earthy flavors. A rich blend of mushrooms and lentils, bathed in a velvety brown gravy, resting on a bed of creamy mash.

And because we love contrasts, I added that vibrant touch of lingonberries, just like in a Nordic cabin. It’s not just food, it’s a feeling.

„The Hero Dish” (Royal Smørrebrød)

The first creation in the new Nordic series: Royal Smørrebrød. Who said tartare needs meat? I used slow-roasted beets for earthy sweetness, capers for acidity, and a horseradish cream that gives just the right amount of 'spiciness'. All on a thick slice of rye bread.

It's simple, it's vibrant, and it's exactly the kind of food I want to bring to my plate. 🟣🌿🇩🇰

Radio silence... but the kitchen has been busy. 🌿

Greetings from Bergen! 🇳🇴

You might have noticed it's been quiet around here lately. I took some necessary time to relocate, reset, and find fresh inspiration.

This change of scenery has sparked a new wave of creativity in the kitchen. I’ve been deep in development mode, working on a series of new recipes. The focus remains 100% plant-based, but with elevated techniques and a fresh perspective.

While the rugged nature surrounding me here in Norway is definitely offering some new ideas, my goal is broader: simply creating exciting, delicious vegetable-forward food.

I can't wait to share this new chapter with you. Stay tuned, the first dishes are coming very soon!
