Tonight on Natasha’s Pantry 🥓🥚✨

Homemade Bacon & Egg Pie 🥧 but with a little twist 🙌

Instead of traditional pastry, I used filo pastry which makes it lighter, crispier and honestly SO good 🤤

I layered it up with bacon, onion, cheese and whole eggs, then brushed the top with egg wash to get that beautiful golden crunch.

Super simple. Super comforting. Perfect for lunches the next day too.

FILO BACON & EGG PIE

You’ll need
1 packet filo pastry
6–8 eggs (for a bigger one use 12)
Bacon diced
1 onion finely sliced
Grated cheese
Salt & pepper

Layer filo sheets into the dish, brushing every couple of layers lightly with butter if you wish , I don’t 😝

Add bacon, onion and cheese.

Crack some whole eggs throughout the pie, then whisk the remaining eggs and pour over the top.

Season with salt and pepper. Fold filo over the top or add extra sheets on top.
Brush generously with egg wash for that golden crispy finish ✨

Bake:
180°C for around 45 minutes until golden and set. Crispy on top, soft in the middle and absolutely delicious 🤤

Tonight in Natasha’s Pantry 🍅✨

A good old homemade lasagna the kind that fills the house with the best smell and somehow tastes even better the next day 🤤 I added spinach into mine for extra goodness and honestly… SO good

HOMEMADE LASAGNA

For the mince sauce
500g beef mince
1 onion diced
2 garlic cloves crushed
Big handful fresh spinach
1 carrot grated (optional)
1 jar pasta sauce or homemade tomato sauce
tomato paste
1 tsp mixed herbs
Salt & pepper
Dash Worcestershire sauce

Cook onion and garlic first, add mince and brown off.
Add carrot
Add sauces, herbs and seasoning and simmer 15–20 mins.

Cheese sauce
50g butter
50g flour
2 cups milk
1 cup grated cheese
Salt & pepper

Melt butter, stir in flour.
Slowly whisk in milk until thickened.
Add cheese and stir through.

Layering
I start with a little mince sauce on the bottom first.
Then
Lasagna sheets
Mince sauce
Cheese sauce

Repeat layers and finish with cheese on top 🙌

Bake
180°C for around 40–45 mins until golden and bubbling.

Let it sit 10 minutes before cutting (if you can wait 😂)

FEIJOA & BANANA MUFFINS

Ingredients
2 ripe bananas mashed
6 feijoas scooped out
2 eggs
1/3 cup melted butter
1/3 cup brown sugar or coconut sugar
1 tsp vanilla
1 1/2 cups flour
1 tsp baking powder

Method
1. Preheat oven to 180°C.
2. Mash bananas and feijoas together.
3. Mix in eggs, butter, sugar and vanilla.
4. Fold through dry ingredients until just combined.
5. Spoon into muffin trays.
6. Bake 18–22 minutes until golden.

Tips
Don’t overmix or they’ll go dense.
The riper the bananas the sweeter and moister the muffins.
Beautiful served warm with butter.

This is how I cook every day 👇

No recipe. No plan. No fancy ingredients.

Mushroom + kūmara = soup 🍲 And honestly? It costs hardly anything, but it feeds everyone.

But here’s why I’m sharing this. Our kids are watching. People who are less adventurous in the kitchen are watching. They’re learning and I love sharing new ideas 💡 with the help of Rob Edwards our goal is simple bringing old traditions back to modern kitchens!
Somewhere along the way. Cooking became complicated. People started saying it was cheaper to eat out than at home 🤦‍♀️???
With busy lives cooking has become overwhelming. But It doesn’t need to be.

This is me most nights. Throwing things together, keeping it simple

👉 You don’t need heaps of money
👉 You don’t need to be a “good cook”
👉 You just need to start

🌿 Homemade Beetroot Chutney (with a little kick 🔥)

Had some beetroot sitting around and reused a few jars from butter chicken the other night turned into this absolute winner 👌

Ingredients
• 4–5 medium beetroot (peeled & grated)
• 1 onion (finely chopped)
• 2 apples (grated)
• ½ cup raisins or cranberries (optional) I used both 😜
• 1 cup brown sugar
• 1 cup apple cider vinegar
• 1 tsp salt
• 1–2 tsp fresh grated ginger
• 1 clove garlic (crushed)
• 1 tsp mustard powder (or seeds)
• ¼–½ tsp cayenne pepper (depending on how spicy you like it)

Method
1. Add everything into a large pot.
2. Bring to a gentle boil, stirring until sugar dissolves.
3. Reduce to a simmer and cook uncovered for 45–60 minutes.
4. Stir occasionally until thick, glossy and jam-like.
5. If too thick, add a tablespoon of hot water or a splash of vinegar. I blended mine with a hand blender a little
6. Spoon into clean, sterilised jars while hot.

Tips
• Tastes even better after a few days 👌
• Perfect with cheese, crackers or in sandwiches

So easy, so good and a great way to use up what you’ve got at home 🙌

Green tomato & pineapple pickle 🥒

Do you have green tomatoes sitting in your garden? With this weather turning to absolute crap? 🌧️ Go pick them! 🙌
Such a good weekend activity to do indoors with the kids and honestly one of my favourites.
This one takes me right back to my childhood my mum used to make it, and now my kids LOVE it just as much 💛

Perfect on crackers with cheese 🧀 or loaded into a sandwich with meat

🍅 Bottled Tomato Sauce (Pizza / Bolognese Base)

First timer! If I can do it so can you 💥 So good, these tomatoes were seconds and going to be thrown out! I scored them for FREE!

Ingredients
• 2 kg ripe fresh tomatoes
• 1 large onion, finely chopped
• 4 cloves garlic, crushed
• 3 tbsp olive oil
• 1 tbsp tomato paste (optional but adds richness)
• 1½ tsp salt
• 1 tsp sugar or honey
• 1 tsp dried oregano
• 1 tsp dried basil
• ½ tsp black pepper

For bottling safety
• 1 tablespoon bottled lemon juice per 500 ml jar

Method

1. Prepare the tomatoes
Wash and roughly chop the tomatoes. Remove the hard core if needed. Peeling is optional.

2. Cook the base
Heat olive oil in a large pot.
Add onion and cook for 5–7 minutes until soft.

3. Add garlic
Add crushed garlic and cook 30 seconds until fragrant.

4. Add tomatoes
Add chopped tomatoes and tomato paste.
Bring to a simmer.

5. Season
Add salt, sugar, oregano, basil and black pepper.

6. Simmer
Cook uncovered for 35–45 minutes, stirring occasionally until the sauce thickens.

7. Blend (optional)
Use a stick blender if you prefer a smoother sauce. Leave chunky if you like a rustic style.

Bottling Instructions
1. Sterilise jars and keep them warm.
2. Add 1 tablespoon bottled lemon juice to each 500 ml jar.
3. Pour the hot sauce into jars, leaving about 2 cm headspace.
4. Wipe jar rims and seal with lids.

Water Bath Processing

Place jars in boiling water so they are fully covered.

Process for:
• 35 minutes for 500 ml jars
• 40 minutes for 1 litre jars

Remove and allow jars to cool undisturbed.

Once sealed, store in a cool dark pantry for up to 12 months.

🍐 Bottled Pears Pantry Shelves Ready 🍐

There is something so satisfying about seeing jars of fruit lined up on the shelf… especially when you know you’ve preserved them yourself.

I bottled pears and finished them with a water bath to make them shelf-stable for long-term storage. This simple step means they’ll keep beautifully for months and be ready whenever we want them.

Home preserving isn’t just about food it’s about slowing down, learning traditional skills and creating security in your pantry.

These pears will be perfect for
✨ Desserts
✨ Breakfast with yoghurt or porridge
✨ Baking
✨ Or just straight from the jar
