In Argao, Cebu, traditional torta is made using tuba (fermented coconut sap), a key ingredient that gives it its distinctive aroma, flavor, and character.
Since authentic tuba is not available here in New Zealand, we spent countless hours experimenting and creating our own fermented coconut juice, the closest we could make to the traditional flavor profile of Argao Cebu.
Combined with a blend of premium quality grass fed Nz butter and a heritage homemade Nz pork lard, this creates the soft, buttery, tender crumb that makes authentic Torta Argao so beloved.
