If someone had told me a year ago that I'd have written a cookbook, I wouldn't have believed it. But, I'm living proof (with a wee 50th coming up in a couple of weeks to prove it!) that you're never too old to do something new and exciting...and terrifying! Life is way too short to not be doing what you love xx

🥣Overnight Oats🥣

This recipe is a game changer for those of you who don't have enough time in the morning (isn't that all of us?!) and yet, want a yummy, nourishing breakfast that will keep you fueled all morning!

At the end of this video, you'll see how I put this into jars - adding either some fresh or frozen fruit at the bottom (we had mango this week!), some nuts, pile in the overnight oats and a spoon of yoghurt - and you're sorted for the day. I do this at the start of the week so weekday mornings couldn't be easier! Perfect for the teenagers too....the frozen fruit will mean it's still cold by mid-morning.

Ingredients:
🥣1 cup rolled oats
🥣2 tbsp chia seeds
🥣2 cups milk
🥣1 tbsp pure maple syrup or runny honey
🥣1/4 tsp salt
any optional additions you desire!

Method:
- Mix all the ingredients together in a bowl until well combined. Cover, then place in the fridge overnight.
- To serve, divide among bowls, drizzle with extra milk and add your choice of topping.
- You can make a larger batch and keep in the fridge for up to 3 days.

Serves: 2-3
Prep Time: 5 minutes
Soaking Time: Overnight

🌸Cranberry, Apricot and White Chocolate Slice🌸

This one is sure to become a family favourite!

With only 15 minutes needed to prepare, zero cooking time and enough to fill the tin for a week, it's easy to see why! Add to that, you can change out the dried fruit for a combination of fruit and nuts (I love pistachio nuts with the cranberries), meaning you can get it done with whatever you already have in the pantry.

Just a few simple ingredients -
🌸butter
🌸plain biscuits
🌸dried apricots
🌸dried cranberries
🌸white chocolate
🌸condensed milk
🌸icing sugar

🌿Greek Lemon Chicken and Potatoes🌿

Still feeling the Spring vibes with this zesty, lemony dish! Only 10 minutes of prep time and then everything is cooked in the one pan. Couldn't be easier.

Either get it ready before work in the morning, and then the marinade has the day to work its magic (and it means straight in the oven when you get home!) Or, make it straight away and cook....it'll still taste delicious!

Just a few simple ingredients -
🌿chicken pieces
🌿potatoes
🌿olive oil
🌿lemons
🌿dried oregano or rosemary
🌿crushed garlic
🌿salt and pepper

🍋Lemon Yoghurt Cake🍋

The sun is shining (where I live at least!) and there's a few Daffodils out in the garden...so I'm in full Spring mode! What better way to celebrate the start of Spring this weekend than this light and zingy cake! Super easy to make and super delicious to eat.

Serve with a dusting of icing sugar and a dollop of whipped cream or plain yoghurt, and enjoy. In our video (see below), we went dessert style and added some blueberry sauce which made it even more delicious!

Ingredients:
🍋1 cup plain flour
🍋1 cup sugar
🍋3 eggs
🍋1/2 cup natural unsweetened yoghurt
🍋110g (4oz) butter, melted
🍋1/2 cup lemon juice
🍋2 tsp grated lemon zest
🍋pinch of salt
🍋2 tsp baking powder
🍋icing sugar to serve

Method:
- Preheat the oven to 180°C and grease a 20cm (8 inch) cake tin.
- Place all ingredients except the baking powder into a large mixing bowl and beat until smooth - about 5 minutes.
- Fold in the baking powder.
- Pour the mixture into the prepared tin and bake for 25 minutes or until a skewer inserted in the centre of the cake comes out clean.
- Dust with icing sugar before serving.

Serves: 12
Prep Time: 10 minutes
Cooking Time: 25 minutes

🥥Apricot and Coconut Crumble🥥

Crumble is one of those recipes that, once you know the basics it's super versatile. So, depending on what fruit you have in the fruit bowl, the pantry or the freezer, you've got an easy and economical dessert.

Serve with custard, cream, yoghurt or ice cream. Delicious!

Just a few basic ingredients:
🥥apricots (tinned is perfect!)
🥥desiccated coconut
🥥brown sugar
🥥flour
🥥sugar
🥥butter

(Went for the coconut emoji because it's cold and I wish I was on a tropical island - thank goodness there's crumble for pudding!!)

🍗Baked Chicken Stroganoff 🍗

I'd never really been a fan of stroganoff dishes until I tried this one! It's super easy (of course!) but super tasty and comforting as well. Perfect for those cold nights!

All the ingredients are placed in a baking dish and cooked in the oven. Easy peasy! Serve with noodles - preferably pappardelle, but just as yummy on mashed potatoes.

Ingredients:
🍗4 large chicken thighs, bone-in, skin on
🍗1 onion, finely chopped
🍗200g (7oz) mushrooms, chopped
🍗1 pkt (37g) creamy mushroom soup mix
🍗2 tsp smoked paprika
🍗1/2 tsp dried thyme
🍗1 cup water
🍗1/2 cup sour cream
salt and pepper to taste

Method:
- Preheat the oven to 180°C and grease a 23cm (9 inch) baking dish.
- Scatter the onion and mushrooms in the bottom of the prepared dish.
- Whisk the soup mix, paprika, thyme and water in a large jug until well combined then pour over the onion and mushrooms.
- Rub a small amount of oil on the chicken skin then season with plenty of salt and pepper. Place on top of the onion and mushrooms.
- Bake for 45-50 minutes or until the chicken is cooked through and the skin is golden.
- Transfer the chicken to a serving platter.
- Mix the sour cream through the sauce then pour over the chicken and serve.

Serves: 4
Prep Time: 10 minutes
Cooking Time: 45-50 minutes

🍝Baked Sticky Meatballs🍝

This super tasty recipe from our 5 Ingredients cookbook couldn't be easier.

The sauce has the perfect balance of savoury and sweet, and if you would like to heat it up, then feel free to add some chill flakes. Baking the sauce and the meatballs in the oven together means that the sauce sticks to the meat and makes everything extra tasty...without all the hassle!

Just a few simple ingredients -
🍝beef mince
🍝dried breadcrumbs
🍝salt and pepper
🍝tomato sauce
🍝brown sugar
🍝Worchestershire sauce

Serve with rice or mashed potatoes instead of spaghetti if you like.

🍎Apple Strudel🍎

All the comfort of a warm slice of apple pie without all the hassle of making from scratch. This 5 ingredient recipe is so easy to make, creating a comforting dessert that always goes down a treat.

Ingredients:
🍎1 sheet frozen puff pastry, just thawed
🍎3 cooking apples (I like to use Granny Smiths)
🍎1/4 cup (55g) brown sugar
🍎1 tsp cornflour
🍎1/2 tsp cinnamon
🍎I tbsp raisins (optional)
🍎milk to brush (optional)

Method:
- Preheat the oven to 200°C. Grease a baking tray and line with baking paper.
- Place the pastry onto the prepared tray. Peel and grate the apples, then use your hands to squeeze the excess juice into a glass (it's delicious to drink, so don't waste it)!
- Place the apples into a bowl then add the sugar, cornflour, cinnamon and raisins, if using. Mix to combine.
- Spoon the apple mixture evenly over one half of the pastry, leaving a 1cm border on 3 sides. Fold the other half of the pastry over the apples and press or crimp the edges to seal. Brush the top with a little milk if desired. Prick the top of the pastry with a fork 4-5 times to allow the steam to escape.
- Bake for 30-35 minutes, until the pastry is golden. Remove from the oven and allow to cool for at least 15 minutes before serving.

Serves: 3-4
Prep Time: 10 minutes
Cooking Time: 30-35 minutes

Serve warm, with a scoop of vanilla ice cream on the side.
